This reuben casserole recipe has everything you love about a reuben sandwich but in casserole form. It combines corned beef with rye bread, swiss cheese, sauerkraut, pickles, and tangy thousand island dressing to make an irresistible casserole dish that the entire family will love. In addition to tasting incredible, this casserole is also so, so easy to put together. In fact, just 10 minutes of prep time are all you need to make it!

Ingredients

6-7 slices of rye bread

1 lb. Thinly sliced corned beef

12 oz. sauerkraut

4 cups shredded Swiss cheese, divided

1 ½ tsp coriander, caraway, or fennel seeds

1 cup chopped dill pickles

1 cup of full-fat milk

3 eggs

¼ cup thousand island dressing (or Russian dressing)

¼ cup mustard

Instructions

Preheat oven to 350°F (180°C) and spray an 11x7-inch baking dish with cooking spray.
Cut 4-5 slices of rye bread into cubes and place them into a greased casserole dish.
Place the remaining bread in a food processor or high-power blender and process until coarse crumbs are formed. Set aside for later.
Top the cubed bread with half the corned beef.
Top the meat with sauerkraut and dill pickles. Add half the desired seeds and half the Swiss cheese.
Repeat layers and push the casserole gently on top.
Whisk eggs with milk, thousand island dressing, and mustard in a bowl.
Pour the mixture evenly over the casserole and top with the homemade breadcrumbs.
Cover the casserole with aluminum foil and bake for 45 minutes.
Cool the casserole for 5 minutes before slicing and serving.
