So, to tenderize them, just wrap each chicken breast in plastic wrap and use a mallet to pound the chicken out until it's about ¼-inch thick. Making the chicken breasts thinner and equal in size will make them cook more evenly in the oven.
Step 2: Season the chicken. Once you've pounded the cutlets to the right thickness, you'll want to coat each piece of chicken with a little olive oil, then rub the salt, pepper, and Italian seasoning into the chicken.
