1. Prep work: Preheat the oven to 350°F (175°C) and grease a 9x13-inch casserole dish with nonstick cooking spray. Heat a large skillet over medium high heat. When the skillet is hot, add the ground beef and cook until the beef is browned. Once it's fully cooked, set it aside.
2. Cook the peppers: To the skillet, add the olive oil and fry the bell peppers for about 5 minutes in the hot oil.
3. Combine the filling: Return the cooked ground beef to the skillet and add the corn kernels, salsa, and taco seasoning. Stir to combine the ground beef mixture together.
