Keto Falafel | The Best Easy Keto Falafel Recipe

This keto falafel is crispy on the outside and tender on the inside with a delicious savory flavor. It makes for the ultimate keto appetizer, snack, side, or even main dish. And the best is each one of these low carb falafel balls has just 2 NET CARBS! 

Ingredients

Scale

1 onion, chopped

2 cloves of garlic

1/4 cup (15g) of cilantro

1/2 cup (30g) of fresh parsley

8 ounces (230g) of cauliflower

1/2 cup (60g) of almond flour

1 large egg

1 teaspoon of xanthan gum

1/2 teaspoon of ground turmeric

1 tablespoon of ground cumin

2 teaspoons of salt

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking tray with parchment paper.
  2. Break the cauliflower into florets, place them into the food processor and blend until chunky. Scrape out the cauliflower and set it aside.
  3. Add onion, garlic, parsley, and cilantro into the food processor and blend until finely chopped.
  4. Add the cauliflower back in, along with the other ingredients (the almond flour, egg, cumin, xanthan gum, turmeric, cumin, and salt). Blend everything just until combined.
  5. Gently form the mixture into balls around 2 tablespoons in size.
  6. Place evenly on baking sheet and bake for 35 minutes.
  7. To air fry, spray the air fryer basket with cooking spray and place falafel in a single layer in the basket. Lightly spray falafel and cook for 15-20 minutes until golden and crispy, flipping halfway through.
