This copycat Chipotle corn salsa recipe is absolutely delicious, and it tastes spot on to the restaurants. It's filled with sweet corn, diced red onion, roasted poblano pepper, and jalapeño peppers for the perfect balance of savory and spicy flavors. And it's so, so versatile. This Chipotle corn salsa makes a terrific dip for some tortilla chips, and it's also a super tasty addition to a burrito or burrito bowl. Plus, it's effortless to make - just two steps are all you need to follow to put it together!

Ingredients

14 oz. can corn, rinsed, drained (yellow corn, sweet white corn, or mix)

1/3 cup red onion, chopped

1 poblano pepper, roasted

1-2 jalapeno peppers, seeded if desired

1 tbsp fresh lime juice

½ tbsp fresh lemon juice

3 tbsp chopped cilantro

Salt, to taste

Instructions

  1. To roast the poblano pepper, place the pepper directly over the flame on a gas stove and roast until blackened. Or you can put it on a baking sheet and roast it in the oven for 20 minutes at 400°F.
  2. Peel off the black skin and remove the seeds. Chop the poblano pepper on a cutting board.  
  3. In a large bowl, combine corn with onion, poblano pepper, and jalapenos. Add lemon juice, lime juice, and cilantro. Season to taste with salt. 
  4. Give it a good stir.
  5. Serve in a bowl with tortilla chips on the side.
