But this keto pop tarts recipe puts a healthy low carb spin on this sweet treat.
And, let me tell ya, these keto strawberry pop tarts are THE TRUTH. Honestly, each bite is a flavorful explosion that melts in your mouth.
And one of the best parts about these gluten-free pop tarts is they're actually super easy to make! It will take you just over 30 minutes, and then you can enjoy this delicious homemade pastry in a guilt-free, keto-friendly way.

INGREDIENTS FOR KETO POP TARTS
Along with being easy to make, this recipe requires all common keto baking ingredients - some of which you probably already have on hand.
Check out what you'll need to make the pastry dough:
- 2 ¼ cup Almond flour
- ½ cup Coconut flour
- ¼ cup Granular Swerve
- 2 teaspoon Xanthan gum
- ⅓ cup Almond milk
- 7 tbsps Butter
- 1 orange zest (optional)
- 1 egg beaten for brushing
For the strawberry filling:
- 10-12 tablespoon of sugar-free strawberry jam
- 6 fresh strawberries, sliced (optional)
And for the icing:
- ¼ cup Confectioners Swerve
- 1 tablespoon Almond milk
- Drop of red or pink coloring (optional) ... or use a little beet juice
- Sugar-free sprinkles for decoration
So, I know the ingredients list may seem long, but there are three essential parts to this recipe that completes these homemade pop tarts.

KETO FLOURS TO USE
We will be using a combination of almond flour and coconut flour for the pastry dough.
If you are allergic to almond flour or want other options, feel free to swap it out with an equal amount of sunflower seed flouror walnut flour. You will get the same flaky and chewy pastry results.
Now, I've mentioned this a few times on the blog before, but it is worth mentioning again. DO NOT substitute almond flour for more coconut flour. Coconut flour is super absorbent and will cause these pop tarts to turn out dry and crumbly if it is the only flour used.
With that said, I do not suggest substituting coconut flour for any other flour. The coconut flour is essential for giving the dough the structure and texture that makes these pop tarts so spot on.
KETO SWEETENERS TO USE
To give these pop tarts all the sweetness they need without all the sugar, we will be using Granular Swerve for the dough and Confectioners Swerve for the icing.
Swerve is a 0 calorie, sugar-free sweetener with the same amount of sweetness as sugar.
Another sweetener option you have is to use Lakanto's Monkfruit Sweetener and Powdered Sweetener. Both will sweeten up these pop tarts without adding any sugar or calories!
Also, allulose will work great to sweeten up these pop tarts. You may have to use a bit more than is listed in the ingredients list though since most of the time it's not as sweet as Swerve/Lakanto.
HOW TO MAKE KETO POP TARTS
As I mentioned a few times, the process of making these pop tarts is simple, and it is super fun too!
This is such a great recipe to make with kids! They'll love making them with you, and of course, eating them too.
So gather your ingredients, get your baking buddies, and let's make some pop tarts!
STEP 1: MAKING THE DOUGH
The first thing you will do is preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.
Then, add your almond flour, coconut flour, granular swerve, and xanthan gum to a large bowl and give them a whisk.
Next, add in your almond milk, melted butter, and orange zest. Mix all of your ingredients until they are thoroughly combined and a dough has formed.
Knead your dough for a couple of minutes until you can form a ball. Then wrap your dough ball in plastic wrap and put it in the freezer for 10 minutes.
STEP 2: MAKING AND BAKING YOUR POP TARTS
After 10 minutes is up, take your dough out of the freezer and divide it in half. Then roll each half individually between two pieces of parchment paper or silicone mats until they are about ¼" inch thick.
Next, cut out 6 rectangles with a pizza cutter from each piece of dough for a total of 12. And then transfer 6 of your rectangles of dough to your baking tray. Make sure to leave a little space between each one.
Then spread 1-2 tablespoons of sugar-free jam in the center of each rectangle, followed by some of the cut-up/mashed strawberries.
After that, lay a rectangle of dough over the filling and seal the edges by pressing them down with a fork. And to finish it off, lightly brush the top of the dough with the beaten egg.
Repeat this process for all 6 pop tarts, then bake them for around 20 minutes until golden brown.
Let your pop tarts cool for about 10 minutes on the baking sheet, then transfer them to a cooling rack to finish cooling.
STEP 3: ICING YOUR POP TARTS
While your pop tarts are baking, you can make the icing to complete them.
First, take out a small bowl and add in your confectioners swerve, almond milk, and a drop of food coloring.
Then whisk your ingredients together until you have a smooth icing. And if you want more of a glaze consistency, just add in some extra confectioners swerve.
To finish up, drizzle your icing over the cooled pop tarts and add a couple of sprinkles on top. Enjoy!
STORING YOUR KETO POP TARTS
So as you know, this recipe makes 6 delicious pop tarts. And if you make this recipe with your family, I'm guessing you won't have any leftovers!
But if you do, you can store them in an airtight container at room temperature for up to 2 days. I think these pop tarts are lovely at room temperature, but if you want them heated, just pop them in the microwave for a few seconds.
And if you want to store these pop tarts for even longer, you can keep them in the freezer for up to 2 months. Just freeze them completely on a baking sheet, then place them in an airtight container.
And make sure to defrost them in the refrigerator the day before you will be eating them.
NUTRITIONAL INFORMATION
Each one of these keto carb pop tarts has just 5 NET CARBS! That's about 7 times less than boxed pop tarts!

Instructions
- Preheat oven to 350°F (180°C). Line a baking tray with parchment paper and set aside.
- In a large bowl, whisk all the dry ingredients (almond flour, coconut flour, granular swerve and xanthan gum). Then add in almond milk, melted butter, and orange zest and mix everything until a dough forms.
- Knead the dough for a couple of minutes until you have a ball. Wrap it in plastic wrap and freeze for 10 minutes.
- Divide the dough ball in half and roll each half between two pieces of parchment paper into ¼" inch thick rectangles. Then cut each half into 6 rectangles (12 total).
- Transfer the rectangles of dough onto a baking tray. Spread 1-2 tablespoon of jam, followed by one fresh strawberry cut into slices.
- Lay the other rectangles over the filling and seal the edges by pressing them with a fork. Brush the top of the dough with a beaten egg.
- Bake for around 20 minutes until golden brown. Let cool on baking sheet for 10 minutes, then finish cooling on wire rack.
- Meanwhile, in a small bowl, whisk together almond milk, confectioners swerve, and food coloring. Add more confectioners swerve if you want more of a glaze consistency.
- Drizzle the icing over the cooled pop tarts and top with sprinkles.
