Keto Pop Tarts | The Best Keto and Gluten Free Pop Tarts

These keto pop tarts are buttery and flaky with the most delicious strawberry filling. Honestly, these might be better than the store-bought kind. But instead of being loaded with carbs and sugar, these gluten free and keto pop tarts only have 5 NET CARBS!

Ingredients

Scale

Pastry dough:

2 1/4 cup (250g) Almond flour

1/2 cup (60g) Coconut flour

1/4 cup (50g) Granular Swerve

2 tsp Xanthan gum

1/3 cup Almond milk

7 tbsps (100g) Butter

1 orange zest (optional) 

1 egg beaten for brushing

Strawberry filling:

10 tbsp of sugar free strawberry jam

6 fresh strawberries, sliced (optional)

Icing:

1/4 cup (25g) Confectioners Swerve

1 tbsp Almond milk

Drop of red or pink coloring (optional) .. or use beet juice

Sugar-free sprinkles for decoration 

Instructions

  1. Preheat oven to 350°F (180°C). Line a baking tray with parchment paper and set aside.
  2. In a large bowl, whisk all the dry ingredients (almond flour, coconut flour, granular swerve and xanthan gum). Then add in almond milk, melted butter, and orange zest and mix everything until a dough forms.
  3. Knead the dough for a couple of minutes until you have a ball. Wrap it in plastic wrap and freeze for 10 minutes.
  4. Divide the dough ball in half and roll each half between two pieces of parchment paper into 1/4" inch thick rectangles. Then cut each half into 6 rectangles (12 total).
  5. Transfer the rectangles of dough onto a baking tray. Spread 1-2 tbsp of jam, followed by one fresh strawberry cut into slices.
  6. Lay the other rectangles over the filling and seal the edges by pressing them with a fork. Brush the top of the dough with a beaten egg.
  7. Bake for around 20 minutes until golden brown. Let cool on baking sheet for 10 minutes, then finish cooling on wire rack.
  8. Meanwhile, in a small bowl, whisk together almond milk, confectioners swerve, and food coloring. Add more confectioners swerve if you want more of a glaze consistency.
  9. Drizzle the icing over the cooled pop tarts and top with sprinkles.
