My Take On A BBQ Meatloaf
I've had my fair share of traditional meatloaf dinners, but I'm telling you, I've never had a meatloaf quite like this BBQ one.
It's extra tender and juicy with a slightly crisp top to give it the best texture. Covered in a flavorful honey BBQ sauce glaze and hearty enough to fill up even the biggest eaters, it doesn't get much better than this!
Plus, this recipe uses common ingredients and household spices, making it the perfect option for a simple weeknight meal. If you have ground beef, you probably have everything else you need at home, so you can make this recipe for dinner tonight!
It's even easy enough to make that I usually whip up a hearty and comforting side to serve with it, like these twice baked mashed potatoes.
Ingredients
- Ground beef- My favorite kind to use is 80/20.
- Plain panko bread crumbs- to hold the meat together.
- Worcestershire sauce- the secret ingredient to add a depth of flavor to the BBQ glaze.
- Milk- adds moisture to the meatloaf.
- Onion- to add a delicious savory flavor.
- Dijon mustard- for a little tang in the sauce.
- Barbecue sauce- feel free to use your favorite kind.
- Honey- to add sticky sweetness to the glaze.
- Salt and black pepper
How To Make BBQ Meatloaf
1. Prep work. Preheat your oven to 350°F (180°C). Grease a shallow baking pan with some nonstick cooking spray, or line a baking sheet with parchment paper.
2. Make the meatloaf mixture. In a large mixing bowl, combine the ground beef, panko breadcrumbs, one tablespoon of Worcestershire sauce, mustard, onion, milk, three tablespoons of barbecue sauce, salt, and pepper. You'll want to mix well until all of the ingredients just come together. Use your hands to shape the mixture into a thick rectangular loaf and transfer it to the prepared pan.
3. Make the glaze. In a small bowl, whisk together the remaining barbecue sauce, Worcestershire sauce, and the honey. Spread it evenly over the meatloaf, making sure to cover every inch of it, including the sides!
4. Bake and serve. Bake the barbecue meatloaf in the preheated oven for 45 minutes until tender and cooked through. Garnish with a little parsley, slice, and serve hot!
What Can I Serve With This BBQ Meatloaf Recipe?
It's so delicious with any comfort food side! Some of my favorites to serve with it are these redskin mashed potatoes, ranch potatoes, cathead biscuits, or sweet potato cornbread.
My Pro Tips To Make The Best Recipe
- Don't over-mix the meat! There's nothing worse than a dry, dense meatloaf. And that's exactly what will happen if you mix your ingredients too much. All you have to do is stir them together until just combined.
- You shouldn't skimp on the BBQ glaze. It's sticky sweet, and delicious, so don't hold back! I even like to double the sauce and serve some on the side for dipping.
- Allow the meat to rest for a few minutes when you take it out of the oven. You want all those juices to absorb back into the meat to be sure you have a moist, tender meatloaf.
- You can use lean ground beef if you prefer, but one with a higher fat content makes it extra juicy and delicious.
How I Recommend Storing and Reheating Leftovers
In the fridge: We rarely have any leftovers in my house, but if you end up with any, transfer them to an airtight container and keep them in the fridge for 3-4 days.
In the freezer: To keep the leftovers for longer, slice the meatloaf into individual slices and wrap each one with plastic wrap. Put the wrapped slices into an airtight container or freezer-safe bag and freeze for 3 months.
Reheating: My favorite way to reheat the BBQ meatloaf is to put it in a baking dish covered with foil and warm it in the oven at 350°F for 10 minutes. For a quicker method, you can microwave the slices for about a minute, but I'm not a fan of the texture it gives the meat.
