Now, my favorite order from the restaurant is the Carol chicken salad with a side of their broccoli salad recipe. It's just so good, and I had to recreate the Carol chicken salad at home since I could eat it every day for lunch!
This recipe is loaded with fresh and savory flavors from the delicious balance of ranch dressing, mayonnaise, and crisp celery. Then all of that deliciousness is mixed with juicy chicken for one satisfying lunch or dinner.
Gah, it's just so good!
And in addition to being delicious, it's a breeze to make. You just have to cook the chicken, then combine it with the creamy dressing ingredients and chill it in the fridge.

How To Make Chicken Salad Chick Classic Carol Recipe
As I mentioned earlier, this recipe is super simple to make. You basically just boil the chicken tenders, shred 'em, then mix everything up and pile it on your sandwiches.
That's really all there is to it!
So, let's stop wasting time and make some chicken salad sandwiches!
Step 1: Cook the chicken. First, begin by putting the chicken stock in a large pot and bringing it to a boil. Once the stock is boiling, you'll want to reduce the heat to medium, and then you can add the chicken tenders to it. Now let the chicken simmer for about 15-20 minutes until it's cooked through.

- 0.75lb. chicken tenderloins
- 16oz. Chicken stock
- ⅓ cup mayonnaise
- 1 ½ tablespoon finely chopped celery
- Salt and pepper, to taste
- 1 ½ teaspoon dry Ranch dressing seasoning
Instructions
- Bring the chicken stock to a boil in a saucepot.
- Add chicken tenders, and reduce heat to medium. Simmer the chicken until cooked through for 15-20 minutes.
- Remove the chicken from the saucepot and allow it to cool down so you can handle it. Shred the cooked chicken tenders with two forks.
- Place the shredded chicken into a large bowl, and add mayonnaise, celery, salt, pepper, and ranch seasoning. Stir until combined.
- Refrigerate for 30 minutes.
- Serve on lettuce or in a sandwich.
