My Take On The Chicken Salad Chick Classic Carol
If you've never heard of Chicken Salad Chick, it's a restaurant chain that serves a variety of different chicken salads, from savory, nutty, fruity, and even spicy chicken salads. And if you've ever tried it before, then you know how good it is!
Now, my favorite order from the restaurant is the Carol chicken salad with a side of their broccoli salad recipe. It's just so good, and I had to recreate the Carol chicken salad at home since I could eat it every day for lunch!
This recipe is loaded with fresh and savory flavors from the delicious balance of ranch dressing, mayonnaise, and crisp celery. Then all of that deliciousness is mixed with juicy chicken for one satisfying lunch or dinner.
Gah, it's just so good!
And in addition to being delicious, it's a breeze to make. You just have to cook the chicken, then combine it with the creamy dressing ingredients and chill it in the fridge.
While it's chilling, you'll have some time to whip up anything you want to go with it. If you're looking for what to serve with chicken salad, two of my favorite recipes are these crockpot cheesy potatoes and Taco Bell nacho fries.
- Chicken tenders- thinly sliced chicken breasts work too.
- Chicken stock- for flavor. You can also use chicken broth.
- Mayonnaise- for all that delicious creaminess.
- Celery- finely chopped for a little crunch.
- Salt and pepper- a sprinkle of each to taste.
- Ranch salad seasoning- I used the one from Hidden Valley.
Pretty simple, right?! If you want to make another simple recipe just like this, you have to try my 4 ingredient pasta salad.
By the way, if you're looking for more easy recipes to use up your dry Ranch dressing mix, then you've got to try this Ranch chicken recipe next!
How To Make Chicken Salad Chick Classic Carol Recipe
As I mentioned earlier, this recipe is super simple to make. You basically just boil the chicken tenders, shred 'em, then mix everything up and pile it on your sandwiches.
That's really all there is to it!
So, let's stop wasting time and make some chicken salad sandwiches!
Step 1: Cook the chicken. First, begin by putting the chicken stock in a large pot and bringing it to a boil. Once the stock is boiling, you'll want to reduce the heat to medium, and then you can add the chicken tenders to it. Now let the chicken simmer for about 15-20 minutes until it's cooked through.
Step 2: Shred the chicken. When the chicken is fully cooked, you can remove the chicken tenders from the pot and allow them to cool down for a minute. Once they're cool enough to handle, you can shred the chicken into pieces with two forks, your hands, or a stand mixer with a paddle attachment.
Step 3: Assemble and serve. Now that the chicken is good to go, you can add it to a large bowl with the mayonnaise, celery, salt, pepper, and Ranch seasoning. Then you'll want to give everything a good mix until it's fully combined. You can give it a taste and adjust any seasonings as needed. Cover and refrigerate for 30 minutes before serving to let all of the flavors develop. Finally, serve the chicken salad on a lettuce bed or as a sandwich. Enjoy!
How I Recommend Storing Leftovers
This recipe for chicken salad makes 2 servings, so it's perfect for a hearty lunch or if you want to have some leftovers for the next day.
If you don't end up eating all of it, you can store it in an airtight container in the refrigerator for 3 to 5 days. Then whenever you want to eat it again, just take it out of the fridge and dig in!
