    Seriously, this Chipotle copycat recipe has all the same amazing flavors of the fajita veggies at Chipotle, but you can whip them up in the comfort of your own home (and for a fraction of the price!) And those sauteed peppers and onions are so tender, crisp, and tasty that you really won't believe they're not from the restaurant.

    Plus, they are super easy to make! With just 12 minutes of meal prepping and cooking time, you can make these fajita sautéed vegetables in about the same time it takes to eat them!

    Now, I think these fajita vegetables make the ultimate Mexican side dish cuisine, and I love to serve them with cilantro lime rice, these Chipotle black beans and Chipotle sofritas, or this Chipotle steak. But if you're looking for a healthy veggie snack, just wrap the aromatic bell pepper and onions up in soft wheat tortillas with Pico de Gallo and sour cream for the ultimate veggie fajitas!

    As I mentioned above, this Chipotle copycat recipe is so easy to make. All you need is five ingredients, and you can make the perfect fajita veggies. And I can almost guarantee that you'll have most - if not all - of the ingredients at your house already since they're all kitchen/pantry staples.

    Anyway, here are all of the Chipotle fajita veggie ingredients:

    • 3 tablespoon vegetable or sunflower oil
    • 2 large green bell peppers
    • 1 half moon sliced red onion
    • ½ teaspoon dried oregano
    • Salt, to taste

    So easy, right?

    Now, if you want to change up the flavor of this recipe, you can make fajita veggies spicy and more flavorful by adding all your favorite seasonings. Garlic powder, onion powder, chili powder, and fajita seasoning can all add a little heat with a dash of lime juice to balance the spice. 

    By the way, if you have any leftover bell peppers, you have to use them to make these cream cheese stuffed bell peppers next!

    How To Make Fajita Veggies

    I know I've mentioned this already, but it's worth saying again - making this fajita vegetable recipe is about as easy as it gets. I mean, it's hard to beat a recipe that requires only 5 ingredients and 4 steps, right?

    Anyway, let's not waste another second and get cooking!

    Step 1: Prepare The Bell Peppers and Onions

    First, you'll need to get the peppers and onions prepared to cook. So slice the bell peppers and onions into thin strips to make the perfect fajita veggies.

    Chipotle fajita veggies use sliced bell pepper and onions about 2 inches long, so try and do the same for your homemade fajita veggies. If you prefer more crunch, you can cut bell peppers and onions into thick strips but just make sure they are consistent, so all the veggies cook evenly.

    Step 2: Cook The Fajita Vegetables

    After you slice the onions and peppers, heat some oil in a large cast iron skillet or large pan over medium-high heat. A large skillet is always best because it will help your bell peppers and onions cook evenly since they'll be able to lay flat on the surface.

    Once the oil is hot, you can add the sliced peppers and onions to the cast iron pan, along with the oregano and salt to taste.

    Now cook your fajita veggies for about 6-7 minutes, occasionally tossing them so they cook evenly. Whenever the veggies are tender and crisp, you can take them out of the pan and set them aside.
