One of the things I love most about these chicken cheese steak sandwiches is how simple the ingredient list is.
Anyway, here's everything you'll need to make the sandwiches:
- 2 tablespoon olive oil
- 8 oz. chicken breasts, skinless, boneless
- Salt and pepper, to taste
- ½ teaspoon garlic powder
- ½ teaspoon Italian seasoning
- 1 small red bell pepper, seeded, sliced
- 1 green bell pepper, seeded, sliced
- 1 small onion, thinly sliced
- 4 slices smoked or plain provolone cheese
- 2 hoagie rolls
Simple stuff, eh?!
Now, I always use chicken breasts in this recipe since I think they work best in it. However, if you don't have chicken breasts, you can use chicken thighs instead. Or, if you're like me and you always have a rotisserie chicken in the fridge, you can use that as well!

So with that said, let's stop wasting time and get cooking!

First things first, you'll want to season the chicken with salt, pepper, and ¼ teaspoon of garlic powder. Then, you can heat half of the olive oil in a skillet.
Once the skillet is hot, you can add the seasoned chicken breasts to it and cook the chicken for about 5-6 minutes per side or until the chicken is fully cooked. Then, you can remove the chicken from the skillet and set it aside.
STEP 2: COOK THE PEPPERS AND ONIONS
Now onto the veggies. First, you'll want to heat the remaining olive oil in the same skillet you just cooked the chicken in. Then you can add the bell peppers, onions, Italian seasoning, salt, and pepper to the skillet and give everything a mix. Next, let the vegetables cook for 7-8 minutes or until they're slightly charred.
STEP 3: ADD THE CHICKEN AND CHEESE
While the veggies are still sautéing, you'll want to thinly slice the chicken into thin slices and add them to the skillet with the peppers and onions.
Then you can divide the thinly sliced chicken breasts and veggies into two portions in the skillet and top each portion with two slices of provolone cheese. Leave it untouched to let the cheese slices melt over the chicken for a minute or two.
