Ingredients
- Olive oil
- Onion, chopped
- Green pepper, chopped
- Carrots, chopped
- Garlic clove, minced
- Diced tomatoes- you'll want to use them undrained.
- Chicken broth- vegetable stock and seafood stock work great.
- White wine
- Bay leaf
- Dried oregano
- Dried basil
- Pepper
- Salmon filets- cut into cubes.
- Shrimp- uncooked, peeled and deveined.
By the way, you can use any extra salmon to make this salmon sushi bake recipe. And if you have extra shrimp, you can make this seafood rice or shrimp soup!
How To Make Seafood Soup
Step 1: Cook The Vegetables
First things first, you'll want to set a large pot over medium heat and add the olive oil to it.
Then, once the oil is hot, you'll want to add the onion, green pepper, carrots, and garlic and cook the veggies until they're tender and fragrant.
Step 2: Prepare The Soup
So, once you've got a nice aroma emanating from the pot, you can stir in tomatoes, chicken broth, wine, and seasonings and bring everything to a boil.
Then, once you've got a boil going on in the pot, you can reduce the heat to medium-low, cover the pot, and simmer the broth for 30 minutes. This simmer will allow all the flavors of the garlic, onion, tomatoes, and vegetables to fuse together for a delicious soup.
By the way, I recommend going easy on the salt because natural salt will be added when you add your fish and shrimp to the soup.
Step 3: Add The Seafood and Cook
Now it's time to add the most important ingredient; that amazing seafood.
So, once you've added the fish and shrimp to the pot, you'll want to give everything a good stir and then cover the pot. Then, cook everything for another 7-ish minutes or until the fish flakes easily with a fork and the shrimp turn pink.
Once the fish and shrimp are ready, you can discard the bay leaves and get ready to serve.
Step 4: Serve The Soup
Lastly, you'll want to check the salt and other seasonings one last time and then use a ladle to dish up your soup.
Make sure everyone gets their fair share of shrimp and fish and garnish with parsley and a touch of black pepper or fresh lemon juice to add flavor. Serve with crusty bread or any other hearty bread that tickles your fancy to soak up all that delicious broth.

This recipe will make about 4 servings, so you might end up with some leftovers! To store your leftover soup, just pour it into a shallow container and let it cool down naturally. Once it is fully cooled, you can cover it and store it in the refrigerator for up to 3-4 days.
My favorite way to reheat this leftover soup is slowly in a large pot, stirring frequently over medium-low heat until it's warm.

- 1 can (14-½ ounces) diced tomatoes, undrained
- ¾ cup chicken broth
- ¼ cup white wine
- 1 bay leaf
- ½ tsp. dried oregano
- ¼ tsp. dried basil
- ¼ tsp. pepper
- ¾ pound salmon filets, cut into cubes
- ½ pound uncooked shrimp, peeled and deveined
