- ¼ cup of melted refined coconut oil (or room temp. vegan butter or olive oil)
- ¼ cup of tahini sesame seed butter (or almond butter)
- ¼ cup of maple syrup
- ⅛ cup organic cane sugar
- 3 mashed ripe bananas, plus ½ for decoration
- 1 tablespoon vanilla extract
- 2 teaspoons baking soda
- Pinch of salt

But if you don't want to use tahini, you can substitute it with an equal amount of almond butter. Just make sure the almond butter is on the oily and runny side.
Also, since this is dairy-free banana bread, we will be using coconut oil instead of butter.
I suggest using refined coconut oil because it is more neutral and does not have a coconut flavor - if you use refined coconut oil, your banana bread will taste like coconut.
If you do not have coconut oil or would prefer not to use it, you could also use vegan butter or any oil in its place.
How to make Vegan Banana Bread

And if you still have leftovers and want to keep this banana bread longer, you can freeze it in an airtight container or freezer-safe bag for up to 2 months. Then simply let it thaw in the refrigerator before enjoying it.
And if you want to recreate that fresh out of the oven experience, pop a slice of your banana bread in the microwave for about 20 seconds, put a slab of butter on it, and dig in.
