And what I love about it is it can literally be eaten any time of day - if you need an easy breakfast, grab a slice and start your day off on the right foot. Or enjoy a piece for a quick snack or delicious dessert.

Seriously, you can eat this healthy banana bread whenever you want, and it's so satisfying.

And the best part about this recipe is the fact that you only need a few simple ingredients to make it.

A loaf of banana bread sliced and laying face down on a wooden cutting board. There is a drizzle of maple syrup running down the front of the loaf.

    Ingredients for Vegan Banana Bread

As I just alluded to, the ingredients you need to make this recipe are pretty simple.

And there's a good chance that you already have the majority of them in your pantry already.

    Here's what you'll need:

    • 1 cup of all-purpose flour
    • ¼ cup of melted refined coconut oil (or room temp. vegan butter or olive oil)
    • ¼ cup of tahini sesame seed butter (or almond butter)
    • ¼ cup of maple syrup
    • ⅛ cup organic cane sugar
    • 3 mashed ripe bananas, plus ½ for decoration
    • 1 tablespoon vanilla extract
    • 2 teaspoons baking soda
    • Pinch of salt

If you don't have all of these ingredients on hand, make sure to pick them up because you won't want to miss out on this all of this deliciousness.

Oh, and if you want to jazz up this recipe, feel free to add in some walnuts or vegan chocolate chips.

Now, let's talk about a few of the ingredients we will be using.

    TURNING BANANA BREAD VEGAN

Ok, so you may be wondering what tahini is doing in this banana bread.

Well, tahini is not as sweet as other nut butters, so it adds a savory element that mixes super well with the bananas, syrup, and sugar. This tahini is my secret ingredient, and I think it gives this vegan banana bread the perfect blend of flavors.

But if you don't want to use tahini, you can substitute it with an equal amount of almond butter. Just make sure the almond butter is on the oily and runny side.

Also, since this is dairy-free banana bread, we will be using coconut oil instead of butter.

I suggest using refined coconut oil because it is more neutral and does not have a coconut flavor - if you use refined coconut oil, your banana bread will taste like coconut.

If you do not have coconut oil or would prefer not to use it, you could also use vegan butter or any oil in its place.

How to make Vegan Banana Bread

Now that you have everything you need, it's time to mix up the best vegan banana bread.

All you need is about 5-10 minutes to make the batter, and the rest of the time is letting the oven do its thing.

And while it's baking, the wonderful smell of banana bread will fill the air, so you'll have to find a distraction for about 50 minutes.

Loaf of banana bread on a piece of parchment paper on a wooden cutting board. There is a slice out of the loaf sitting in front of it and a bunch of bananas behind the loaf.

    STEP 1: PREPARING TO BAKE

The first step in every recipe is to get things prepped! So start by preheating your oven to 350°F (177°C) and line an 8x4 inch loaf pan with parchment paper.

Then get out all of your ingredients and a large mixing bowl. If you want to save some time, you can measure out your ingredients ahead of time.

Lastly, mash up your ripe bananas so they're ready to be added.

    STEP 2: MAKING THE BATTER

The first thing you will do is add the melted coconut oil, tahini, maple syrup, mashed bananas, and vanilla to your large bowl.

Then you will stir all of these ingredients until they are well incorporated.

Next, add the flour, baking soda, and salt to the wet ingredient mixture and stir everything until well combined and you have a smooth batter.

STEP 3: BAKING YOUR VEGAN BANANA BREAD

After the batter is mixed, pour it into the prepared loaf pan and give the pan a couple of moderate taps on the counter to even it out.

Then place one halved banana in the center of the batter, gently pushing it in the batter - this is an optional step but it will give your banana bread a professional aesthetic and add some more banana flavor.

Next, transfer your loaf pan into the oven and bake for 50-55 minutes, or until the center has risen and the edges are golden brown.

To check and see if it is done, stick a toothpick in the center, and it should come out clean.

    STORING YOUR VEGAN BANANA BREAD

My favorite part about making banana bread is being able to eat it for the next few days. And it is just as delicious leftover as it is the day you make it!

You can store your bread either in your loaf pan covered tightly with plastic wrap or in an airtight container. It will keep for up to 4 days at room temperature or in the refrigerator for up to a week.

And if you still have leftovers and want to keep this banana bread longer, you can freeze it in an airtight container or freezer-safe bag for up to 2 months. Then simply let it thaw in the refrigerator before enjoying it.

And if you want to recreate that fresh out of the oven experience, pop a slice of your banana bread in the microwave for about 20 seconds, put a slab of butter on it, and dig in.

    WRAPPING IT ALL UP

Having a go-to banana bread recipe is essential, and this plant-based version is one you'll want to laminate in your recipe book.

Baking up this easy vegan banana bread will give you a quick breakfast to grab in the morning, a filling afternoon snack, or a tasty after-dinner dessert.

Share some of it with your friends and family - I guarantee they won't be able to tell it's vegan!

Anyways, I hope you enjoy this vegan banana bread recipe as much as I do.
