1 cup of all-purpose flour

1/4 cup of melted coconut oil (or room temp. vegan butter or olive oil)

1/4 cup of tahini sesame seed butter (or almond butter

1/4 cup of maple syrup

1/8 cup organic cane sugar

3 mashed ripe bananas, plus 1/2 for decoration

1 tablespoon vanilla extract

2 teaspoons baking soda

Pinch of salt


  1. Preheat the oven to 350°F (177°C). Grease a 8×4-inch loaf pan and line with a sheet of parchment.
  2. In a large bowl, whisk together the coconut oil, tahini, maple syrup, sugar, mashed bananas and vanilla. Give it a thorough stir.
  3. Add the flour, baking soda and salt to the wet ingredients, stirring until everything is well combined.
  4. Pour the batter into the prepared loaf pan. Give the pan a couple of moderate taps on the counter to even out the batter.
  5. Place one halved banana on the center of the batter, gently pushing it in.
  6. Transfer to the oven to bake for 50 to 55 minutes, or until the center has risen, the edges are golden brown, and a toothpick inserted into the center comes out clean.
