Seriously, after you take one bite of this sweet potato bread, you'll have to stop yourself from eating the whole loaf! The texture of the bread, along with the brown sugar cinnamon spice, is just to die for.
The best part about this bread recipe, though has to be how easy it is to make. Honestly, making sweet potato bread couldn't get any easier than this - there's no kneading involved or waiting for the bread to rise.
You basically just have to mix the ingredients together, which should take no more than 5-10 minutes! Kind of like this 2 banana bread recipe.

Now, I definitely recommend making the mashed sweet potatoes ahead of time so you can just toss them into your batter right away and save time. With that said though, you can also use canned or homemade sweet potato puree, or you can blend canned sweet potatoes.

Now, while I think this sweet potato bread is perfect as is, I do like to add a little "something extra" to it from time to time. Adding some chocolate chips to it will make it more of a dessert bread and chopped nuts - like chopped pecans - always enhance the fall vibes of it.
Finally, once you slice the bread, butter is always a tasty addition to it. But, if you want to elevate the sweet flavors, even more, a drizzle of some honey or maple syrup always does the trick.
You could even sprinkle powdered sugar on top or spread some cream cheese on it to give it a similar feel to this pumpkin cream cheese bread!

I've said it once, and I'll say it again, this sweet potato bread recipe is as easy as it gets. Seriously, you don't have to be a regular baker to make it turn out as if you bought it from a bakery!
Anyway, let's stop wasting time and dive into how to make this sweet potato bread!
Step 1: Prep Work
Begin by preheating the oven to 350°F (180ºC). Then, grab your favorite loaf pan, and line the loaf pan with parchment paper.
Oh, and you can really use any size loaf pan that you want, it will just change the thickness of the bread.
Step 2: Make The Bread Batter
Now, to make the bread batter, we're going to start with the wet ingredients.
So, begin by adding your prepared mashed sweet potatoes to a large bowl. Then, add the water, eggs, oil, yogurt, and vanilla extract to the bowl of mashed sweet potato, whisk until everything combines, and set it aside.
Now, onto the dry ingredients. In a second large bowl, add the flour, brown sugar, sugar, baking soda, cinnamon, and ginger and whisk all of these ingredients to combine.
Then, pour the wet sweet potato mixture into the bowl of dry ingredients. Give everything a good stir with a rubber spatula until all of the ingredients are well incorporated, and you have a smooth batter.
Step 3: Bake The Bread
Once you have the bread batter ready to go, spoon the batter into the prepared loaf pan with the rubber spatula and smooth out the top, so it's even.
Then, you can put the loaf pan in the oven and bake your sweet potato bread for about 60-70 minutes or until a toothpick inserted in the center comes out clean.

To store the bread, simply let it cool completely and then either transfer it to an airtight container or wrap it up tightly in plastic wrap. Stored this way, your bread will last at room temperature for about 3-4 days or in the fridge for up to 1 week.
By the way, if you want to keep it for longer, you can store the bread in an airtight container - or wrapped in plastic wrap and stored in a freezer-safe bag - in the freezer for up to 6 months!

But, if you want to warm it up, you can either pop a slice in the microwave for about 10 seconds or you can crisp it up a little in the toaster oven. Either way, this homemade bread will be delicious!
