This sweet potato bread recipe creates a richly decadent and fluffy bread that has the perfect balance of sweet and delicate fall spices. Honestly, each and every bite of it is better than the last, and it's tough to only have 1 slice. Best of all though, it only takes just 5 minutes to prepare this out-of-this-world delicious bread!

1 1/2 cups mashed sweet potatoes 

 3 tbsp. water

 2 large eggs

 1/2 cup vegetable oil

 1/4 cup yogurt

 1 tsp. vanilla extract

 1 3/4 cups all-purpose flour

 1 1/4 cups sugar

 1/4 cup light brown sugar

 2 tsp.  baking soda

 1 tbsp. ground cinnamon

 1 tsp. ground ginger

Instructions

  1. Preheat the oven to 350°F (180ºC). 
  2. Line a loaf pan with parchment paper.
  3. Add the mashed sweet potatoes to a large bowl. Add the water, eggs, oil, yogurt, and vanilla extract to the bowl of sweet potatoes and whisk until combined; set aside. 
  4. In another large mixing bowl, add the dry ingredients - flour, brown sugar, sugar, baking soda, cinnamon, and ginger, and whisk to combine.
  5. Pour the wet sweet potato mixture into the bowl of dry ingredients, and stir to incorporate everything together. 
  6. Spoon the batter into the prepared pan, smoothing the top lightly with a spatula.
  7. Bake for 60-70 minutes or until a toothpick comes out clean inserted in the center.
  8. Allow the bread to cool in the loaf pan for 10 minutes before taking it out to cool completely on a wire rack.
