The Best Stuffed Pepper Casserole
If you love stuffed peppers, just wait until you try this stuffed pepper casserole recipe.
I mean, it's got everything you love about regular stuffed peppers, but instead of individually stuffing each bell pepper with the filling, you cook it all in one skillet to make it a casserole. From the seasoned ground turkey to the sauteed red and green bell peppers with rice mixed in and cheese on top, this casserole really has it all.
Plus, you don't even have to use the oven, which means you get all of the same delicious flavors, but in half the time.
Oh, and the process of making this stuffed pepper casserole couldn't be any easier. You basically just assemble the entire dish in your skillet. Seriously, how easy does that sounds?! Plus, since everything cooks in just one pan clean up is a breeze too.
Anyway, as you may know by now, I'm a bit of a casserole connoisseur. I mean, I have made quite a few casseroles - like this sausage casserole, this John Wayne casserole, and this cheeseburger casserole - on the blog lately. With that said though, I have to say this stuffed pepper casserole may be my best casserole recipe yet!
Ingredients
The ingredient list for this stuffed pepper casserole is pretty straightforward. In fact, you probably have most - if not all of them - at home already.
Anyway, here's what you'll need to make this stuffed pepper casserole recipe:
- 1 tbsp. Olive Oil
- 1 Onion, chopped
- 1 Garlic Clove, chopped
- 1 Red Bell Pepper, chopped
- 1 Green Bell Pepper, chopped
- ½ lb. Ground Turkey
- 1 can Crushed Tomatoes
- 1 tbsp. Italian Seasoning
- 1 tsp. Cumin Powder
- 2 cups Cooked Spinach
- 2 cups Brown Rice, cooked
- Salt and Pepper
- 1 cup Shredded Cheddar Cheese (or Mozzarella Cheese)
- ¼ cup Sour Cream
- ¼ cup Fresh Parsley
See, pretty simple stuff, right?
By the way, you can use almost all of these same ingredients to make this ground turkey casserole and this Mexican casserole. Or, for my favorite, you can use some to make my old fashioned stuffed bell peppers.
Ingredient Substitutions And Modifications
Now, I think this recipe is on point exactly as it is, but there is wiggle room to adjust it, depending on what you have in the kitchen.
When it comes to the green bell peppers and red bell peppers, I chose both because I like the color variation. That being said, you can use all green peppers or all red peppers, or even yellow and orange bell pepper. Whatever you find at the store is perfectly fine.
As for the ground turkey, this can be substituted for ground beef or any ground meat you prefer, like ground chicken.
The same goes for the rice, I used brown rice, but white rice, wild rice, or cauliflower rice would all work in this recipe as well.
Oh, and for the cheese, I used cheddar cheese, but mozzarella cheese, colby jack cheese, or any kind of shredded cheese will work just as well to make this stuffed pepper casserole recipe.
How To Make Stuffed Pepper Casserole
As I mentioned earlier, it really couldn't be easier to put this bell pepper and ground turkey casserole recipe together. You basically just cook the ground turkey with the veggies, then add-in the tomatoes, rice, spinach, and seasonings, and top everything with some shredded cheese.
Sounds pretty easy, right?! Well, that's because it is.
Anyway, let's stop wasting time and get cooking!
Step 1: Cook The Turkey And Veggies
First, you'll want to take out a large cast iron skillet, set it over medium heat, and add the olive oil to it.
Then, once the oil is hot, you can add the chopped onion and garlic to the skillet and cook them for about 3 minutes - or until fragrant.
After the onion and garlic become fragrant, you'll want to add the chopped bell peppers and ground turkey to the skillet. Then, you'll want to break up the turkey with a wooden spoon or spatula and cook everything together for about 5 minutes. You want the turkey to brown on every side and the peppers to be slightly tender.
Step 2: Add The Tomatoes And Seasoning
Once the turkey is fully cooked, you can add the crushed tomatoes, Italian seasoning, and cumin to the skillet.Then, you can give everything a good mix to combine all of the ingredients together and cook for about 15 minutes - or until the liquid from the tomato sauce has reduced.
Step 3: Finishing The Casserole
Once the tomato sauce reduces you can add the cooked spinach and cooked rice to the skillet - season everything with salt and pepper - and mix everything together until combined. Then, once that's looking good, you can top everything with some shredded cheese. Finally, you can cover the skillet with a lid and cook everything until the cheese completely melts.
When the cheese melts, you can serve this stuffed pepper casserole with a dollop of sour cream and fresh parsley.

This recipe for stuffed pepper casserole makes 6 large servings. So, it's great for a big family dinner on busy weeknights, and there should be enough for everyone to go in for seconds. Honestly, the recipe makes so much you might even be able to save some leftovers!
Speaking of leftovers, if you end up having any, you'll want to store them in an airtight container, or Ziplock bag with the excess air squeezed out. Stored either of these ways your leftover stuffed pepper casserole will stay good in the fridge for 3-4 days.
With that said though, if you want to store this casserole for even longer you can freeze it for about 2-3 months.
How To Reheat Stuffed Pepper Casserole
Once you're ready to enjoy this stuffed pepper casserole again, you can easily reheat it for the best leftover experience.
So, one way of doing that is by putting everything back in a skillet and warming it up over medium heat - stirring constantly - until the cheese melts and the casserole is warmed through.
Alternatively, you can reheat this stuffed pepper casserole in the oven. Just pop it in a baking dish and warm it in the oven at 350°F for about 10-15 minutes.
Lastly, if you want to reheat it as quickly as possible you can use the microwave. I recommend heating it in 45-second intervals until it's warmed throughout.
