This stuffed pepper casserole combines perfectly seasoned ground turkey with tender sautéed veggies, rice, and melty cheese to make a casserole like no other. Seriously, every bite of this casserole is as good as the last one, and it's got all of the deliciousness you'd expect from classic stuffed peppers. Best of all though is the fact that you can make this bell pepper casserole in just 20 minutes or less!

Ingredients

1 tbsp. Olive Oil

1 Onion, chopped

1 Garlic Clove, chopped

1 Red Bell Pepper, chopped

1 Green Bell Pepper, chopped

1/2 lb. (250g) Ground Turkey

1 can Crushed Tomatoes

1 tbsp. Italian Seasoning

1 tsp. Cumin Powder

2 cups Cooked Spinach

2 cups Brown Rice, cooked

Salt and Pepper

1 cup Shredded Cheddar Cheese (or mozzarella)

1/4 cup Sour Cream

1/4 cup Fresh Parsley

Instructions

  1. Heat a large cast iron skillet to medium and add the oil to it.
  2. Add the onion and garlic and cook for about 3 minutes.
  3. Add the bell peppers and ground turkey to the skillet and, break the turkey with a wooden spatula, cook until it browns.
  4. Add the crushed tomatoes, Italian seasoning, and cumin powder and cook for about 15 minutes or until the liquids are reduced.
  5. Add the cooked spinach and brown rice, season with salt and pepper, and mix to combine.
  6. Top with shredded cheddar or mozzarella cheese. Cover the lid to let the cheese melt.
  7. Serve with sour cream and fresh parsley.
