As I'm sure you know, refined sugar - and really just any kind of sugar in general - is off-limits if you're following a low carb diet like the keto diet. So, to keep this hot chocolate keto friendly, low carb, and sugar free, we'll be using granulated erythritol instead.
Having said that, my favorite erythritol sweetener to use is Swerve - it has the same taste and sweetness level as regular sugar, but it also has 0 carbs and 0 calories, making it an excellent sweetener for the keto diet.
Another great option you can use is Lakanto's Monk Fruit Sweetener. Just like Swerve, this monk fruit sweetener is as sweet as regular sugar and has no carbs or calories. So, if monk fruit is all you have at home, you can use that just as well!

HOW TO MAK KETO HOT CHOCOLATE
This keto hot chocolate recipe honestly can't get any simpler. All you have to do is combine the ingredients, heat them up in a pot, and transfer your keto cocoa to a mug. How easy is that?!
And, all in all, this recipe should take about 10 minutes or less to make from start to finish.
Also, just so you know, the recipe makes 1 cup or exactly 1 serving of keto hot chocolate. But, of course, you can multiply the recipe if you're making this hot chocolate for more people - or if you want an extra large serving for yourself!

First, put a small pot over low heat on your stovetop and add the almond milk, cocoa powder, granulated erythritol, xanthan gum - if using it -and salt to the pot.

STEP 2: FINISHING UP & SERVING
Once your keto hot cocoa is ready, pour it into your favorite mug - or mugs - while its' nice and hot.

Or, you can make your own by whipping a cup of heavy cream - and a tablespoon of granulated erythritol if you want it sweeter - with a beater until you get medium peaks.
