How To Make Fried Burritos
Step 1: Cook The Meat
First, take out a large skillet or saucepot, put it over medium-high heat, and add the ground beef and pork to it. Then, after you've done that, you can cook the ground meat for a couple of minutes, breaking it apart until it's fully cooked through.
Step 2: Add The Veggies
Once your meat mixture is fully cooked, you can add the onions and bell pepper to the skillet and let them cook for 2-3 minutes or until they're slightly translucent. Just make sure you stir the veggies occasionally with a wooden spoon so they don't burn.
Anyway, after they cook, you can add in your Rotel tomatoes, jalapenos, and pickled jalapenos. Now you'll want to bring this all to a simmer and cook everything until the liquid evaporates. By the way, when I made this recipe, the Rotel tomatoes had plenty of liquid, but if you notice your meat is drying out, then you can add beef stock or water.
Step 3: Add The Beans
Up next, you'll want to stir the pinto beans, black beans, and refried beans into your veggie and meat mixture. Then you can sprinkle in some salt and pepper and cook everything for a minute or so until the beans are heated through.
Step 4: Assemble The Burritos
Now that all of the filling ingredients are good to go, it's time to assemble the burritos! To do this, you'll want to heat each flour tortilla in a skillet over medium heat for 20-30 seconds per side.
Then, you can transfer the tortilla to a plate, place a couple of tablespoons of the filling mixture in the middle of the tortilla, roll it up, and set it aside.
Step 5: Fry The Burritos
Once you've rolled up your burritos, you can add 2 inches of oil to a skillet and heat it over high heat. As soon as the oil is hot, you can add each burrito to the hot oil - seam side down - and fry it for a minute or so - until it's golden brown on one side. Then, you'll want to flip the burrito and fry it on the other side until it's golden brown as well.
Next, you can repeat this frying process with all of the burritos, adding more oil in between if needed. Finally, serve each fried burrito on a plate with a side of sour cream, salsa, or whatever you want. Enjoy!
How I Recommend Storing Leftovers
This recipe for fried burritos makes 12 burritos, so there's a good chance you'll end up with some leftovers even if you serve them for a big family dinner.
So to store your leftover burritos, just let them cool completely, then wrap them tightly in aluminum foil, and store them in a sealed plastic bag or air-tight container. Stored either of these ways, they'll last in the fridge for 3-4 days.
Now, the reason this recipe makes so many burritos is that they keep incredibly well in the freezer. We love having frozen burritos on hand to make on busy weeknights or when we don't feel like cooking!
So to freeze, you'll want to let them cool to room temp, then wrap each one tightly with aluminum foil. After you've got it wrapped, you can either put 'em in an airtight container or freezer-safe bag and freeze them for up to 3 months.
How To Reheat The Leftovers
My favorite way to reheat the leftovers is to transfer them to a baking sheet lined with parchment paper and heat them in an oven set to 350°F for about 10-12 minutes - or until they're fully reheated.
If you're reheating a few frozen burritos, put all of the wrapped burritos on a baking sheet and heat them in the oven at 400°F for about 30-45 minutes. Then you'll want to unwrap them and heat 'em for another 10 minutes.
Alternatively, if you want to reheat just one, just heat it in the microwave in 45-second intervals until it's warm. Usually, it's done in just a minute or two. Keep in mind that if you're reheating frozen burritos, they'll take closer to 4-5 minutes to heat up in the microwave.
