How to Make Doritos Casserole

- 1 ( 15.25 oz) can corn, drained
- 1 (14.5 oz) can of diced tomatoes and green chiles (I used Ro-tel)
- 1 can (10.75 oz) condensed cream of chicken soup
- 8 oz sour cream
- 2 cups shredded Monterey jack cheese, divided
- Garnish with tomatoes and cilantro, optional
Instructions
- Preheat the oven to 350°F. Lightly spray a 9x13-inch baking dish (or any large casserole dish) with non-stick cooking spray.
- In a 12-inch skillet or larger, cook the ground beef until browned and fully cooked (about 4 minutes), drain the excess grease. Add ⅓ cup water and the taco seasoning, stir and simmer for 2-3 minutes then turn off the heat.
- Add to the skillet and stir in the black beans, corn, tomatoes and green chiles, cream of chicken soup and the sour cream.
- Spread ½ of the Doritos evenly into the bottom of the prepared pan, top with half of the meat mixture. Top that with half of the cheese. Add the remaining meat mixture on the cheese and evenly spread the remaining Doritos on top. Top it off with the remaining cup of cheese.
- Spray a piece of foil with non-stick cooking spray and cover the casserole.
- Bake for about 20 minutes, then remove the foil and bake for an additional 10 minutes.
