    This Doritos casserole is filled with seasoned ground beef, taco toppings, crushed Doritos, and topped with melty cheese. It's one of the best party dishes and appetizers you can make. And it takes just 40 minutes from start to finish!

    The Best Doritos Casserole

    This recipe takes the classic taco in a bag and deconstructs it into a casserole spread that everyone will love. I mean, this Tex Mex taco casserole with Doritos is so crunchy, cheesy, flavorful, and just irresistible. 

    One of the best parts of this recipe is everything used to create the Dorito casserole cooks in just one skillet! It truly is an ideal platter to make if you're hosting since it's such an easy cooking process and clean-up. 

    And as I mentioned earlier, the entire thing will take 40 minutes, so you don't need to block out much time to create this show-stopping dish.

    Ingredients

    This Doritos casserole is a pantry staples recipe! I seriously wouldn't be surprised if you have almost every single ingredient you need to make it. 

    Here's what you'll need:

    • 1 bag Nacho Cheese-flavored Doritos, lightly crushed
    •  1 lb. ground beef
    •  ⅓ cup water
    •  1 packet taco seasoning
    •  1 can black beans, rinsed and drained
    •  1 can corn, drained
    •  1 can of diced tomatoes and green chiles (I used Ro-tel)
    •  1 can condensed cream of chicken soup
    •  8 oz sour cream
    • 2 cups shredded Monterey jack cheese, divided
    • Garnish with tomatoes and cilantro, optional

    A great part about this recipe is that you can totally customize it however you want! If you don't like one of the ingredients, simply take it out. 

    For example, you can swap the beef for chicken or leave the meat altogether. And if you want to add anything like some bell peppers or smashed avocado for the top, feel free to get creative!

    How to Make Doritos Casserole

    This taco casserole with Doritos is a layered casserole, so every bite has the perfect balance of crunchy, cheesy, and meaty. And it's simple to achieved this, as you'll see below.

    So without further ado, get out the ingredients, and let's make taco in a bag in casserole form!

    Sour cream, tomatoes, green chilies, corn, black beans, and ground beef all in a black skillet. Behind it is part of a white dish of nacho cheese flavored Doritos and in front of it as part of a white bowl with shredded cheese.

    Step 1: Cooking The Beef

    Start by preheating the oven to 350 degrees Fahrenheit (180°C). Then take out any sized casserole dish and set it aside for later.

    Now put a 12-inch skillet (or bigger) over medium-high heat, add a little olive oil to it, and add the ground beef. Cook until well browned, about 4-5 minutes, then drain the excess grease.

    Next, pour the ⅓ cup of water in the skillet with the beef in it and add the taco seasoning. Then simmer it for 2-3 minutes, then turn off the heat. And give the ground beef a couple of stirs to cover it in the seasoning.

    Step 2: Adding The Vegetables

    Once the beef is ready, add the black beans, corn, tomatoes, and green chiles to the skillet. 

    Then stir everything around, add the cream of chicken soup and sour cream to the skillet, and stir well to combine all of the ingredients together.

    Step 3: Assembling the Casserole

    It's layering time, baby! To start, spray the baking dish with a little baking spray and cover the bottom evenly with half of the lightly crushed Doritos. 

    Top the Doritos with half of the mixture from the skillet, followed by half of the shredded cheese. 

    Then cover the cheese with the rest of the mixture, and cover that with the remaining Doritos. Lastly, top it off with the rest of the cheese.

    Step 4: Baking The Casserole

    Now spray a piece of tin foil with baking spray and cover the casserole with the foil. Then bake it at 350°F for about 20 minutes, remove the foil, and bake for an additional 10 minutes. 

    Serve warm and enjoy!

    Storing and Reheating

    So, this recipe will make about 4 servings if you are eating it for dinner or about 8 servings if you are serving it as an appetizer.

    It's hard to believe that you'll have any leftovers, but if you do, just cover the casserole dish or transfer everything to an airtight container and it'll last in the fridge for up to 3 days.

    If you do want to reheat it, pop it back in the oven at 350°F about for 5-10 minutes or until the cheese is melted.

    Ingredients

    1 (15 oz) bag Nacho Cheese-flavored Doritos, lightly crushed

     1 lb. ground beef

     ⅓ cup water

     1 (1 oz) packet taco seasoning

     1 (15.5 oz) can black beans, rinsed and drained

     1 ( 15.25 oz) can corn, drained

     1 (14.5 oz) can of diced tomatoes and green chiles (I used Ro-tel)

     1 can (10.75 oz) condensed cream of chicken soup 

     8 oz sour cream

    2 cups shredded Monterey jack cheese, divided

    Garnish with tomatoes and cilantro, optional

    Instructions

    1. Preheat the oven to 350°F. Lightly spray a 9x13-inch baking dish (or any large casserole dish) with non-stick cooking spray.
    2. In a 12-inch skillet or larger, cook the ground beef until browned and fully cooked (about 4 minutes), drain the excess grease. Add ⅓ cup water and the taco seasoning, stir and simmer for 2-3 minutes then turn off the heat.
    3. Add to the skillet and stir in the black beans, corn, tomatoes and green chiles, cream of chicken soup and the sour cream.
    4. Spread ½ of the Doritos evenly into the bottom of the prepared pan, top with half of the meat mixture. Top that with half of the cheese. Add the remaining meat mixture on the cheese and evenly spread the remaining Doritos on top. Top it off with the remaining cup of cheese.
    5. Spray a piece of foil with non-stick cooking spray and cover the casserole.
    6. Bake for about 20 minutes, then remove the foil and bake for an additional 10 minutes.
