I'm wondering if this can be done as a skillet recipe if I don't have an oven to use to bake it in for the last step... If so, any suggestions or adjustments you would make? Thanks

Hi Sherry! Yes I think it can be done in a skillet, I'd cook the beef in one skillet and crisp the tortillas in a second skillet. Then assemble the casserole in one of the skillets and cover it so the cheese can melt.
