    The Best Keto Coconut Clusters

    Coconut and chocolate is one of the most underrated combinations. And these two things come together to create these keto coconut clusters that are honestly one of the most delicious keto desserts  you can make. 

    And, I'm sure you don't need a lot of convincing to make this recipe, but I'll give you a few reasons.

    The first reason is that these coconut clusters are so easy to make - you don't even need a stove! The prep involves a little mixing - which only takes 5 minutes - and then it's straight in the fridge to set.

    Another reason to make these keto coconut clusters is they're even better than the Innofoods coconut clusters that you can buy at the store! 

    Seriously, they're rich, chocolatey, delightfully sweet, and have just the right amount of coconut flavor. Honestly, each bite melts in your mouth and will keep you coming back for more.

    And just when you thought it couldn't get any better - these coconut clusters are low carb, keto friendly, and sugar free with only 3 NET CARBS per serving!

    Ingredients

    Chocolate and coconut. That's what this incredibly easy recipe revolves around. And if you're a regular keto baker, odds are you have at least one of the four ingredients in your pantry already.

    With that said, here's everything you'll need for this recipe:

    • 2 cups keto chocolate chips
    • 1 cup unsweetened shredded coconut
    • 1 cup toasted shredded coconut (2 tbsp. more to sprinkle)
    • ½ teaspoon sea salt

    If you end up going to the store, pick up a couple of bags of keto chocolate chips. You can use them to make more recipes that are great for the low carb diet, like this 0 NET CARB keto fudge, keto mousse, and these ooey-gooey keto brownies.

    My favorite ones to use for all of those recipes are Lily's Semi Sweet Chocolate Chips, but you can really use any kind you want as long as they are low carb, sugar free, and keto friendly. Oh, and you can use milk, semi sweet, or dark chocolate chips!

    How to Make Keto Coconut Clusters

    All you need for this recipe is a bowl, a spatula, and a microwave - yup, it's that simple.

    And making the keto coconut clusters really couldn't be easier! As I mentioned earlier, just 5 minutes is all you need, so they make the perfect quick keto dessert recipe to whip up when you're in a pinch and need something sweet.

    Anyway, let's not waste any more time, let's get right to it!

    Step 1: Preparing The Clusters

    The first thing you'll do is melt the chocolate chips in the microwave to make the base for these clusters.  

    Put the chocolate chips in a microwave-safe bowl and microwave in 30-second increments, stirring between each one until the chocolate chips are completely melted. 

    Once the chocolate is melted, add the unsweetened coconut flakes and toasted shredded coconut to the bowl and mix until you have a lumpy coconut mixture.

    Step 2: Forming The Clusters

    Now prepare baking sheet with parchment paper and scoop about 1 tablespoon-sized mixture onto the sheet. 

    Then, after all of the keto clusters are formed, sprinkle some shredded coconut and a little sea salt on top.

    Next, put the baking sheet in the fridge for about 2 hours - or until the clusters set. Then, take them out to sit at room temperature for about 10 minutes to soften. 

    Finally, enjoy these chocolatey, coconutty bites of heaven.

    How To Store Coconut Clusters

    So, this recipe makes about 16 keto coconut clusters depending on how big you scoop them, so you'll have plenty leftover to have as a snack, dessert, or power bite to start your day. 

    Now, the best way to store the keto coconut clusters is in an airtight container in the fridge where they'll last about 1 week.

    And if you want to keep them for even longer, just put them in the freezer, and the clusters will be good for up to 2 months.

    Well, that is how to make coconut clusters keto friendly! This recipe is truly one of the easiest things you can make if you want a keto treat that stores super well.

    5. Refrigerate for at least 2 hours or until set, remove from the fridge about 10 minutes before serving.
