For instance, this recipe calls for salmon loins which come from the more meaty sections of the salmon flank. That said, you could use any cut of salmon filet. If your salmon has the skin on, then you can sous vide it as normal and remove the skin while searing the salmon.
As for the rest of the ingredients, if you don't have orange juice, then you can use lemon juice instead. Or, if you don't have fresh thyme, then you can use other herbs like fresh dill, fresh parsley, or sage.

After the time is up, you can remove the salmon from the bag and pat it dry with kitchen towels. Then go ahead and set the cooked salmon aside while you work on the sauce.
