    The Best Loaded Baked Potato Casserole

    If you love baked potatoes with all of the fix-ins, you're going to love this loaded baked potato casserole! It consists of tender potatoes that are smothered in a creamy sauce, then topped with melty cheddar cheese and crispy bacon.

    Gah, it's so good, I'm getting hungry just thinking about it!

    This loaded baked potato casserole recipe isn't just delicious though, it's also super simple to make. I mean, all you have to do is let the potatoes boil, mix everything together, layer it all in a baking dish, and then let the oven take care of the rest.

    How easy does that sound? Pretty darn easy, right?!

    Also, one of the best things about making this baked potato casserole is that it goes incredibly well with pretty much any entree that you pair it with. My go-to dinner recipe to serve alongside it is this lemon chicken recipe. The two paired together make a meal that you'd get at a restaurant!

    Another reason I love this baked potato casserole recipe is that it's made with just a few basic ingredients. In fact, I can almost guarantee that you'll have most - if not all - of them on hand already.

    Anyway, here's what you'll need to make this casserole:

    • 6 large potatoes, peeled and diced
    • ¼ cup unsalted butter
    • 4 oz. cream cheese
    • ⅔ cup sour cream
    • ½ cup milk
    • ½ tsp. garlic powder
    • salt and pepper
    • 2 cups shredded cheddar cheese
    • 1 ½ cup bacon, cooked and crumbled
    • ¼ cup green onions, chopped

    Pretty simple, eh?

    How To Make Loaded Baked Potato Casserole

    I know I've said this a few times, but it's worth saying again - this loaded baked potato casserole recipe could not be easier to make.

    I mean, it takes just 10 minutes to prepare, then the oven pretty much takes care of the rest!

    Anyway, let's not waste any more time, let's get cooking!

    Step 1: Cook The Potatoes

    First things first, you'll want to preheat your oven to 350°F (180ºC) and lightly grease a 9x13-inch casserole dish with nonstick cooking spray.

    Next, you can peel and dice the potatoes - if you haven't done so already - and place them in a large pot. Then you'll want to cover the potatoes completely with water and boil them until they're fork-tender.

    Step 2: Combine The Ingredients

    Once the potatoes are tender, you can drain them and transfer them to a large bowl.

    Then you'll want to add the butter, cream cheese, sour cream, and milk to the bowl with the potatoes and gently fold everything together until combined. Also, just so you know, if you want the potatoes to be more like mashed potatoes, you can press on them while you're mixing 'em. But if you want more of a potato chunk consistency to your casserole, you'll want to be more gentle throughout the mixing process.

    Anyway, after the potatoes are completely coated with the cream cheese mixture, you can add the garlic powder, salt, and pepper, along with 1 ½ cups of shredded cheese and 1 cup of bacon. Then, you can mix everything together and pour it into your prepared casserole dish.

    Step 3: Bake The Casserole

    Now that your loaded baked potato casserole is good to go, you can top the casserole with the remaining shredded cheese and bacon. Then, cover the casserole with aluminum foil and bake it for 25-30 minutes.

    Once the cheese is melted and slightly golden, you can remove your casserole from the oven and let it cool for a minute. Finally, you can top the casserole with some green onions and anything else that you want, and enjoy!

    How To Store Loaded Baked Potato Casserole

    This recipe for loaded baked potato casserole makes about 6 servings. I always find that it's the perfect amount for a big family dinner, and it's so good that we rarely have any leftovers in the Cunningham household.

    With that said, if you do end up with some leftovers, it does store really well. So, to store this loaded baked potato casserole, all you'll want to do is transfer it to an airtight container, and keep it in the fridge. Stored like this it should stay good for around 3-5 days.

    How To Reheat Baked Potato Casserole

    You can use a couple of different methods to reheat your leftovers.

    The first and quickest way is to microwave 'em. To do that, just transfer your desired portion to a microwave-safe plate and microwave it for 1-2 minutes. If it's still not heated through after that amount of time has passed, heat it in 30-second increments until it is.

    Another way to reheat this loaded baked potato casserole is in the oven. Just transfer it to an oven-safe dish and reheat it in a preheated oven at 350°F for 20-30 minutes.
