An Easy One Pot Lasagna Soup
I love lasagna and am always looking for comforting meals to make during the wintertime. So if you can relate, you won't be able to get enough of this recipe! The soup is made up of a delicious meat sauce-like broth with tender lasagna noodles throughout and a cheesy ricotta topping. After one bite, you'll be hooked!
Why You'll Love This Recipe
It's a one pot recipe. Every step to making this savory soup comes together in one pot and one small bowl, which means prep time is kept to a minimum, and so is cleanup.
It'll be a family favorite. My Italian side of the family is obsessed with this recipe. They're constantly sending pictures of them making it during the winter, so I have a feeling everyone you share this with will love it too!
Customizable. I love a dish that offers flexibility, and this lasagna soup recipe is exactly that. You can easily switch up the seasonings or use different meat and cheese to make it taste differently every time.
Ingredients Needed
- Ground beef- or Italian sausage.
- Onion- one medium onion, diced.
- Olive oil- or any oil you want.
- Butter- unsalted butter is best.
- Tomato paste, diced tomatoes, and tomato sauce- for that classic spaghetti sauce flavor and texture.
- Beef broth- to turn the sauce into a soup.
- Uncooked lasagna noodles
- Ricotta cheese and grated Parmesan cheese- for finishing off the soup
- To add flavor- garlic cloves, salt, paprika, thyme, basil, and pepper.
If you have to run to the store for lasagna noodles, make sure to grab some extra so you can make this Olive Garden lasagna classico. It's one of my favorite more traditional lasagna recipes, so you'll definitely want to try it next!
How To Make Lasagna Soup
1. Cook the ground beef: In a large saucepan, heat the olive oil and butter. Once the butter has melted, add the beef and onion to it. Cook over medium-high heat, breaking the beef apart until it's browned on all sides.
2. Make the broth: Add the tomato paste and minced garlic to the pot with the beef. Stir to combine, then add in the canned tomatoes, tomato sauce, and beef broth. Give it a mix and bring this mixture to a boil.
3. Add lasagna noodles: Break the lasagna noodles into pieces and stir them into the soup. Reduce the heat to medium-low and cook, stirring occasionally, until the broken lasagna noodles are tender. Then for the flavor, add the salt, pepper, thyme, basil, and paprika and give it all a stir to combine.
4. Make the cheese topping and serve: In a small bowl, mix together the ricotta cheese, parmesan cheese, and a little salt. Serve the soup warm with a spoonful of the ricotta cheese mixture and a sprinkle of fresh parsley or fresh basil on top. Enjoy!
Make Ahead Instructions
If you want to prepare the soup ahead of time, it's really simple to do so. Just cook the meat and prepare the broth up until the noodles are supposed to be added. Then let it cool and store the beef broth in an airtight container in the fridge. When you're ready to serve, bring the soup to a boil, and then add the noodles and cook. Then, continue with the rest of the steps.
Storage and Reheating Instructions
In the fridge: Store any leftovers you have in an airtight container and keep them in the fridge for up to 4 days.
In the freezer: If you want to keep it for longer, transfer the soup to a freezer-safe container, and you can freeze lasagna soup for up to 3 months.
Reheating: The best way to reheat the soup is on the stovetop. Put the leftovers in a pot set over medium heat. Cook the soup for a few minutes, stirring occasionally, until it reaches your desired temperature. You can also microwave the soup in 30-second increments until warm.
