Ingredients
I think what sets this recipe apart from this rest is you can make this cheesy broccoli cauliflower casserole with no condensed soup required. The sauce is homemade, and it adds a way better flavor!
Anyway, check out what you'll need for this casserole:
- Bacon- fried until extra crispy for the best bacony flavor.
- Cauliflower and broccoli- cut into any sized florets you want.
- Sour cream- you can substitute it with Greek yogurt for a healthier recipe.
- Mayonnaise- to add more creaminess to the sauce.
- Cream cheese- make sure it's softened to room temperature.
- Shredded cheddar cheese- you can also use shredded mozzarella cheese, Monterey Jack cheese, Colby Jack cheese, or really any shredded cheese you want.
- Mixed spices- I used a teaspoon of paprika, garlic powder, salt, pepper and thyme.
How To Make Cheesy Broccoli Cauliflower Casserole
Step 1: Cook the broccoli and cauliflower. Bring a large pot of water to boil, then add the cauliflower florets and broccoli florets to it. Cook for about 15-20 minutes or until the veggies are fork-tender.
Towards the end of cooking, preheat the oven to 350°F (175°C) and spray a casserole dish with nonstick cooking spray.
Step 2: Combine the casserole filling. Once the veggies are fully cooked, strain the veggies and place them in a large mixing bowl.
Mix the veggies with the sour cream, mayonnaise, cream cheese, chopped bacon, and a teaspoon of the mixed spices.
Step 3: Assemble the casserole. Transfer the broccoli and cauliflower mixture to the prepared baking dish and spread it into an even layer.
Sprinkle the entire top of the casserole with shredded cheese.
Step 4: Bake and serve. Cover the baking dish with foil and bake for 15 minutes or until the cheese is bubbly. Then remove the foil and continue baking for another 5 minutes.
Serve immediately while it's nice and hot with any sides you want. Enjoy!
Expert Tips For A Perfect Casserole
- Make sure to fully drain the veggies and remove any excess water. I'll even press lightly on the florets with a paper towel to get all of the moisture out.
- Microwave a bag of frozen broccoli and frozen cauliflower to save some time. You won't have to bake the casserole as long.
- Add extra veggies, like spinach, bell peppers, onion, peas, carrots, or mushrooms, to make an even healthier casserole recipe.
How To Store and Reheat Leftovers
Store any leftovers in an airtight container or in the dish with a lid on it in the fridge for up to 4 days.
Allow the leftover casserole to cool completely, then transfer it to a freezer-safe airtight container or freezer-safe bag and freeze for up to 4 months.
My favorite way to reheat this is to put the casserole back in a dish and warm it in the oven at 350°F for about 10 minutes or until the cheese melts again. For a quicker method, put a single serving in a bowl and microwave in 20-second increments until warm. Allow frozen leftovers to thaw overnight in the fridge, or add more reheating time.
