    This Benihana fried rice recipe takes day-old rice and makes something totally delicious out of it. Every bite is filled with veggies, cooked shrimp, scrambled eggs, rice, and umami goodness. Best of all though, 20 minutes is all it takes to make, and, honestly, it's so good you won't believe it's not the hibachi fried rice from Benihanas itself!

    The Best Benihana Fried Rice

    If you've ever been to Benihana, you likely know all about their iconic hibachi fried rice.

    But, if you've never been there, Benihana is an upscale sushi and Japanese restaurant. And, honestly, the hibachi fried rice is so good, it's worth making a trip to one of the restaurants just for that.

    With that said, though, there isn't a Benihana everywhere in the world, so you can make it at home with this copycat recipe! It has everything - the tender veggies, juicy shrimp, perfect fried egg, crispy rice, and flavorful seasonings.

    Sounds delicious, right?!

    And you can make the meal even better by serving the rice with this fried sushi, Din Tai Fung cucumber salad, or Kani salad.

    Why This Recipe Works

    Quick and easy. The entire recipe will take you well under thirty minutes to make, and you just have to add the ingredients to a wok and let the stove take care of the rest. 

    One pan meal. Everything for this recipe cooks in one wok, so the cooking process and clean-up couldn't be easier.

    A winning combination. The blend of ingredients in this recipe truly creates a fried rice flavor that you just can't get anywhere else.

    Ingredients

    While it may seem like a lot of ingredients, they're all really simple and you might even have most of them on hand already.

    Anyway, here's everything you need to make this copycat Benihana's fried rice recipe:

    • ¼ cup Butter, melted
    • ½ Garlic Clove, minced
    • 2 tbsp. Soy Sauce
    • 1 Lemon
    • 2 Eggs
    • 1 tsp. Sugar
    • A pinch of fish sauce (optional)
    • 1 tbsp. Sesame Oil
    • 1 Carrot, diced
    • ½ Onion, diced
    • ¼ cup Green Onion, sliced
    • 2 cups White Rice, cooked (best from the day before)
    • 2 tbsp. Soy Sauce
    • 1 Pound Cooked Shrimp
    • 1 tbsp. Sesame Seeds

    How To Make Benihana Fried Rice

    1. Make the garlic butter. Add the melted butter, minced garlic clove, soy sauce, and lemon to a small bowl. Give it a good mix until it combines, then set it aside for later.

    2. Fry the egg. Crack the eggs in a small bowl and whisk them so the white combines with the yolk. Grab a wok - or a large skillet - and set it to high heat. Add a bit of sesame oil to coat the surface, followed by the whisked eggs, a pinch of fish sauce, and sugar. Cook the egg for a few a minute or so, moving it around the pan constantly. Then set the cooked egg aside for later.

    3. Cook the veggies. In the same wok - or skillet - add a bit more sesame oil to it and move it around to coat the surface. Add the green onions, onions, and carrots to the wok and saute for a few minutes until soft.

    4. Assemble and serve. Add the cooked rice and the Benihana garlic butter mix from earlier to the wok with the veggies and fry on high heat or until the rice starts to get crispy. Add the cooked shrimp and fried eggs to the wok and mix everything together so it combines. Add green onions and sesame seeds to garnish the cooked fried rice, serve, and enjoy!

    How To Store Benihana Fried Rice

    In the fridge: Transfer everything to an airtight container, and it'll last in the fridge for 3-4 days. Keep in mind, though, that you'll want to count as many days as it's been since you made the rice you used for this recipe in that storage total.

    In the freezer: Store the rice in a freezer-safe bag or container and freeze for up to 2 months.

    Reheating: To reheat fried rice, put it back on the stovetop over medium heat. Add a couple of spoonfuls of water, constantly stir the rice, and heat for a few minutes until it's warm. If you're starting from frozen rice, you'll just need to reheat it for longer.

    Ingredients

    Instructions

    1. Combine the butter, garlic clove, soy sauce, and lemon in a small bowl. Set aside for later.
    2. Whisk the eggs in a small bowl. 
    3. Heat a wok to high heat and add a bit of sesame oil, and the eggs, and add a pinch of fish sauce and sugar. Cook the egg moving them around the pan, then set it aside.
    4. Add a bit more sesame oil to the wok and saute the green onions, onions, and carrots until soft. 
    5. Add the rice and the butter mix and fry at high heat, or until it starts to get crispy. Add the cooked shrimp and serve with the eggs and more green onions, and sesame seeds.
