- 1 cup heavy cream
- 8 oz. salsa
- ¼ cup queso fresco cheese
- ½ cup guacamole

How To Make Torchy's Queso
1. Cook the queso. In a saucepan, combine the green chilies, Velveeta cheese, heavy cream, and roasted salsa. Cook over medium heat until the cheese is melted and mix ingredients until they're smooth and combined.
2. Finish the queso. Place a scoop of guacamole in the bottom of a bowl. Pour the cheese sauce over the guacamole. Top it with crumbled queso fresco cheese, chopped cilantro, and a drizzle of hot sauce.

- I like to squeeze some fresh lime juice on the queso with a lime wedge, before serving to brighten up the flavors.
Storing and Reheating Instructions
In the fridge: Of course, queso is best when served fresh. However, if you end up with some leftover queso, you can store it. Transfer it to an airtight container and store it in the fridge for up to 3 days.
In the freezer: To keep if for longer, put the queso dip in a freezer-safe container and freeze for up to 4 months.
Reheating: I think the best way to reheat the leftover queso is in the microwave. Just microwave it in 30-second increments, stirring between each one until warm. Thaw the frozen queso in the fridge overnight before reheating.
