- Give the sweet potatoes plenty of room. Spread them in a single layer instead of piling them together. Crowding the pan traps steam and keeps the edges from getting nicely browned.
- Keep the sweet potato cubes evenly sized. Cutting them close to ¼-inch helps them roast at the same rate so you don’t end up with some pieces burnt and others still firm.
- Let the turkey brown before stirring too much. Give it some contact with the hot skillet before breaking it apart completely. A little browning adds much more flavor than simply cooking it until gray.
