    This boiled chicken and rice recipe is the ultimate easy, healthy meal. With a handful of basic ingredients, you can serve up a family-sized portion of homemade chicken broth, shredded chicken, perfectly cooked rice, and tender veggies. The whole process is so simple, and yet the results are wonderfully comforting and delicious!

    My Take On Boiled Chicken and Rice

    If you're looking for a meal that's healthy, nutritious, and delicious, look no further than this boiled chicken and rice recipe. 

    Now, I know what you're thinking, chicken and rice alone can be pretty bland on its own, and you'd be right, most of the time. But I have to say this recipe is the exception.

    It seriously takes the deliciousness of the dish up to level 11. And it does so with just a few simple spices.

    Honestly, it's a meal that even the pickiest eaters will love. My 3 year old daughter even loves it! I like to pair it with this sweet corn cake and these cheesy mashed potatoes if I'm making a family dinner.

    Oh, it also makes for a meal prep option you can have on hand for the week. The leftovers store incredibly well, and it makes for a great grab-and-go lunch or no-thought dinner.

    Ingredients

    • Chicken- for protein. You can use boneless chicken breasts or chicken thighs. 
    • Celery, sweet onion, and pepper- to give each bite a little crunch and a depth of flavor.
    • Oregano- for a herby flavor.
    • Long grain white rice- for the base. Feel free to use short grain rice, white rice, basmati rice, or brown rice instead.
    • Fresh parsley- for a pop of color.
    • Salt and pepper

    By the way, if you end up with some leftover ingredients, you can use almost all of them to make this southern chicken and rice recipe next. It goes great with these turnip greens for another great healthy dinner option.

    How To Make Boiled Chicken And Rice

    Step 1: Boil The Chicken

    First, take out a large pot and add the chicken, water, celery, onion, pepper, salt, oregano, and parsley to it. Bring everything to a boil over high heat, then cover the pot, reduce the heat to a simmer, and let the chicken cook for at least 1 hour.

    Step 2: Reserve The Chicken

    Once the chicken is done simmering, remove it from the pot and debone it once the chicken is cool enough to handle - this is, of course, if you used half a chicken. Also, while you're doing this, allow the broth to keep simmering and reduce the heat.

    Step 3: Finish The Dish

    Now it's time to cook the rice. Begin by removing all the chicken broth from the pot and setting it aside. Then, add whatever rice you want to use into the pot, cover it, and let it simmer for about 15 minutes.

    Once the rice is done cooking, add the cooked chicken back to the pot along with the parsley. Give it a taste and season everything with some salt and pepper if necessary. Finally, serve warm and enjoy!

    How I Recommend Storing This Recipe 

    As I mentioned before, one perk of making this chicken and rice dish is that it also makes for great leftovers. In fact, I usually make this dish with the intention of reheating it later or bringing it with me for lunch throughout the week.

    So, if you end up with leftovers, you can store the leftover chicken and rice in an airtight container or individual airtight containers and keep them in the fridge for up to 4 days. Just make sure it has cooled completely before storing it. You can also freeze everything for about 2 months.

    Yes, my favorite way to reheat it is to put everything in a skillet with a splash of broth and warm it over medium heat. You'll want to stir frequently while warming it for a few minutes.

    Can you boil raw chicken and rice together?

    You won't want to boil raw chicken and rice together because they take different amounts of time to cook. The rice cooks in about 15 minutes, whereas the chicken takes about an hour. So instead, you'll want to cook the chicken first and then cook it along with the rice after.

    Is chicken and rice healthy?

    Chicken and rice have been looked at as a healthy meal for a long time. The combo is high in protein, has healthy carbs, and can be made even healthier by adding even more vegetables to it. It also tends to be lower in calories than many other meal choices, and it's also very filling.

    Ingredients

    Scale

    ½ chicken, cut into big pieces, without the skin

     1 stalk celery, rough chopped

     ½ large sweet onion, diced

     1 teaspoon pepper, divided

     1 teaspoon salt, divided

     ½ teaspoon oregano

     1 ½ teaspoons fresh parsley, divided

     1 ½ cups long grain white rice

    Instructions

    1. Add water (enough to cover the chicken), chicken, celery, onion, pepper, salt, oregano, and parsley to a large pot. Bring it to a boil over high heat. Then cover and reduce to a simmer for at least 1 hour.
    2. Once the simmering is complete, remove the chicken from the pot. Once it cools enough to handle, debone it (let the broth continue to simmer and reduce while doing this).
    3. Remove all broth from the pot (or use another pot) and put approximately 3 cups of broth back into the pot along with the rice. Cover and simmer for 15 minutes.
    4. Once the rice is ready, add the chicken back to the pot with parsley and mix to combine.
    5. Serve and enjoy.
