One of my favorite parts about this recipe is how straightforward the ingredient list is.
Here's what you'll need to make it:
- 3-4 boneless skinless chicken breasts, cooked and diced
- 1 stalk of celery, chopped
- ½ white onion diced
- 2 tsp. minced garlic
- ½ cup shredded carrots
- 1 tbsp. olive oil
- 4 cups low sodium chicken broth
- salt and pepper - to taste
- 1 tsp.thyme
- 16 oz. potato gnocchi
- 2 cups half and half
- 1 cup fresh spinach, roughly chopped (frozen will work too)
Pretty simple, right?!
Now, I tend to go with the storebought gnocchi since it's more convenient, but if you want to make homemade gnocchi, you certainly can.
As for the chicken, any leftover cooked chicken will work just fine. My favorite thing to use is a leftover rotisserie chicken for it.

HOW TO MAKE OLIVE GARDEN CHICKEN GNOCCHI SOUP
As I mentioned earlier, making this copycat Olive Garden chicken gnocchi soup recipe is about as easy as it gets. I mean it comes together in 30 minutes and just one pot.
So, with that said, let's get to cooking!
STEP 1: COOK THE VEGGIES
First, heat a little olive oil in a large soup pot set over medium heat. When the pot is hot, add the celery, onions, garlic, and carrots. Sauté the veggies for 2-3 minutes or until the onions are translucent.
STEP 2: ADD THE CHICKEN AND THE GNOCCHI
Then, after you've sautéed the veggies, you can add the cooked chicken, chicken broth, salt, pepper, and thyme.
Bring this to a boil, then gently stir in the potato gnocchi and let it boil for 3-4 minutes. Now you can reduce the heat to a simmer and continue cooking the soup for 10 more minutes.
STEP 3: FINISH THE SOUP AND SERVE
To finish the soup you'll just want to stir in the half and half and the spinach. Let this cook for another 1-2 minutes until the spinach is warm and tender. Then, give the soup a taste and adjust the salt and pepper if needed.
