It combines fresh tomatillos with green tomatoes, jalapeño peppers, lemon and lime juice, and the perfect balance of spices. Ingredients

1 lb. tomatillos, husks removed, halved

2 small green tomatoes, halved

2 cherry tomatoes, halved

1 jalapeno pepper, sliced

¼ cup red onion, chopped

½ tsp garlic paste

½ tsp cumin powder

¼ cup fresh cilantro leaves, loosely packed

2 tbsp lemon juice

2 tbsp lime juice

Salt and pepper, to taste

Tortilla chips to serve

Instructions

  1. Preheat oven to 500°F and line a baking sheet with parchment paper.
  2. Place the tomatillos, green tomatoes, and cherry tomatoes on the baking sheet.
  3. Roast the tomatoes for 20 minutes.
  4. Transfer the tomatoes to a blender, and add jalapeno pepper, red onion, cilantro, cumin powder, garlic paste, lemon, and lime juice.
  5. Blend until you have a smooth mixture.
  6. Season the salsa with salt and pepper to taste and blend briefly, just a few pulses.
  7. Serve tomatillo salsa with tortilla chips.
