Vegan Biscuits and Gravy | The Best Biscuits and Gravy Recipe

This vegan biscuits and gravy recipe is the ultimate vegan comfort food recipe. And the best thing is it's super easy to make! Less than 30 minutes is all it takes to make this classic vegan breakfast recipe! And once you've tried these vegan biscuits and gravy, you'll be making them again, and again.

Ingredients

Biscuits

2 cups (270g) all-purpose flour 

1 tablespoon baking powder

1/2 teaspoon salt

5 tablespoons (75g) vegan butter, cold from the fridge 

2/3 to 3/4 cup unsweetened plant-based milk

Gravy

100g vegan sausage crumbles 

3 cremini mushrooms

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon dried sage

1/3 teaspoon rosemary (fresh or dried)

1 tbsp olive oil

2 tbsp all-purpose flour

2 cups unsweetened plant-based milk

Instructions

  1. To make the dough, preheat the oven to 450°F (232°). 
  2. Then, combine the flour, baking powder, and salt in a bowl and whisk together with a fork. 
  3. After that, grate the vegan butter into the dry ingredient mixture. 
  4. Now, add the plant milk to the dry ingredients and butter mixture, stirring with a spoon until the dough clings together. Add more milk if the dough is too dry (It should be flaky and not stick to your hands).
  5. Knead the dough a few times with your hands. I
  6. If the dough is sticking to the counter, add a little bit of flour as needed. 
  7. Now, to form the biscuits, roll the dough out until it is about an inch thick, then cut the dough into rounds, and place them on an ungreased cookie sheet (I suggest using a biscuit cutter to make it easier to cut out a round shape).
  8. Bake the biscuits for 15 minutes. You will know they are done when the dough has fully risen and turned golden. 
  9. Once the biscuits are done, immediately transfer them to a wire rack.
  10. For the gravy, put a saucepan over medium heat and add in the olive oil. 
  11. Chop the mushrooms and sauté in the olive oil for 3 minutes. Then, add the sausage and spices and cook for 2 more minutes.
  12. Make sure to crumble the sausage with a spatula and mixing everything as you cook it.
  13. After this, sprinkle the flour over the sausage crumbles, and slowly pour the plant milk into the pan while stirring. 
  14. Continue cooking and stirring until the mixture has thickened into a gravy consistency.
  15. Then, once the biscuits are done cooking in the oven, put them on a plate and top with warm gravy.
