Vegan Apple Pie | The Best Vegan Apple Pie Recipe

This vegan apple pie has a sweet, cinnamon apple filling with a flaky and buttery vegan pie crust. Top each slice off with a scoop of vanilla ice cream, and you've got yourself one of the tastiest vegan desserts you can make. And this pie is perfect for special occasions, holidays, or just those days when you're craving a sweet treat. 

Ingredients

Pie Crust:

½ cup corn flour

1 1/2 cup cassava flour

½ cup sugar

1 teaspoon guar gum

1 stick vegan butter, cubed and cold

10 tablespoons cold water (just less than 1/3 cup)

pinch of salt

Filling:

1/2 cup brown sugar

1 tablespoon tapioca flour or cornstarch 

1 teaspoon ground cinnamon

1/8 teaspoon nutmeg

1/4 teaspoon salt

6 cups apples peeled and sliced 1/4-inch thick

1 tablespoon vegan butter (cubed)

Instructions

  1. Preheat the oven to 350°F (176°C). 
  2. Then, put the cassava flour, corn flour, sugar, and guar gum into the food processor, and pulse a few times.
  3. Now, add in the cold butter cubes and pulse until the mixture turns into coarse, dry crumbs. 
  4. When that happens, add in the cold water and pulse 4 to 5 times - the dough should look crumbly at this point.
  5. Now, add the crumbles to a large bowl, and form a ball of dough out of it.
  6. Separate 1/3 of the dough from the ball, and set it aside.
  7. Then, roll the remaining 2/3 of dough into a 1/8 inch thick circle between 2 sheets of parchment paper. 
  8. Peel the top sheet of paper off the dough and carefully flip the dough onto a 9-inch pie dish and press the dough with your hands to form it into the pie plate.
  9. Next, combine the sugar, tapioca flour (or cornstarch), cinnamon, nutmeg, and salt in a large bowl. Whisk these ingredients together to combine. 
  10. Now, add the sliced apples into the bowl and gently coat them with the mixture.
  11. Place the apples into the prepared crust and evenly distribute them. 
  12. Scatter the cubed butter all over the top of the apples.
  13. Roll the rest of the dough into about a 9-inch circle to match pie the plate.
  14. Cut the dough into 12 strips using a pizza cutter.
  15. Arrange the strips on top of the pie to create the lattice crust. Brush with some coconut or soy milk and sprinkle with sugar. 
  16. Bake the pie for 50 to 60 minutes, until the top is golden brown and the apples are tender. 
  17. Let the pie cool for several minutes. Then, slice the pie, and top it with a scoop of vegan vanilla ice cream.
