Ingredients

Scale

1 tbsp. vegetable oil

1 cup onions, diced

2 garlic cloves, minced

1 lb. (500g) ground beef (or beef chuck roast)

1/2 tsp. salt

2 tbsp. ancho chile powder

1 tsp. ground cumin

1 tsp. paprika

1 tbsp. brown sugar

2 cups diced tomatoes

3 tbsp. tomato paste

3 cups beef broth or beef stock

Instructions

  1. Add vegetable oil and onions to a large pot or dutch oven on medium heat and cook until the onions are translucent, about 6-8 minutes.
  2. Add the garlic, and cook for 1 minute, stirring well.
  3. Add the ground beef, breaking apart as you cook it for 6-8 minutes but leave the chunks a bit larger and allow the beef to sear well.
  4. Add in the salt, ancho chile powder, cumin, paprika, and brown sugar and stir well, cooking for 1 minute.
  5. Add in the diced tomatoes and tomato paste and whisk well.
  6. Add in the beef broth and bring to a simmer, reduce the heat to medium-low and cook for 1 hour, stirring every 15 minutes.
