Easy Baked or Smoked Mac and Cheese Recipe

This easy homemade mac and cheese recipe has quickly become a family favorite in our house!  The macaroni noodles are cooked to perfection, and the cheese sauce uses a combination of cheeses that are so rich, creamy, and so melty, you'll be going back for seconds and thirds. Plus, this recipe doubles as an incredible smoked mac and cheese recipe too!

Ingredients

20 oz. (250g) Elbow Pasta

1 cup Milk

1 tbsp. Cornstarch

2 tbsp. Butter

1 ½ cup Cheddar Cheese, shredded

1 cup Gouda Cheese, shredded cheese

2 tbsp. Mustard

Salt and Pepper

1 cup Cheddar Cheese for topping

Instructions

  1. Make the pasta according to package instructions.
  2. Preheat the oven to 400ºF (205°C).
  3. Separate 2 tbsp. of milk from the cup and combine with the cornstarch in a small bowl until dissolved.
  4. Heat the butter in a non-stick pan. Add the milk and cornstarch mixture, and stir until it starts to get thick.
  5. Add the cheeses, mustard, salt, and pepper. Cook for 5 more minutes - stirring occasionally -or until the cheese has melted.
  6. Add the cooked pasta and combine it with the cheese sauce.
  7. Transfer to a baking dish, top with cheddar cheese, and bake for 10-15 minutes, or until golden brown on top.
  8. For smoked mac and cheese: Instead of adding to a baking dish, add the mac and cheese to a tin pan coated with baking spray. Cook on the smoker for about 2 hours at 225°F.
