These keto cinnamon rolls taste just like the ones you would get from a bakery! They're soft, fluffy, and chewy with a delicious brown sugar cinnamon filling that just melts in your mouth. And they're topped with the best cream cheese icing. Seriously, they're so good you'd never believe each one of these low carb cinnamon rolls has just less than 2 NET CARB!

Ingredients

Scale

Cinnamon Roll Dough:

1 cup (110g) almond flour

1/4 cup (30g) coconut flour

3 tbsp. (12g) golden flaxseed flour

1/4 cup (50g) granular swerve 

2 tbsp. (7g) psyllium husk powder

1 teaspoon xanthan gum

1/4 teaspoon salt

2 teaspoon baking powder

2 eggs

2 tbsp. butter melted

3 tbsp. (50g) cream cheese

1 teaspoon vanilla extract

Cinnamon Roll Filling:

1/3 cup (65g) brown swerve

3 tbsp. butter, softened

2 tbsp. cinnamon

Cinnamon Roll Icing: 

2 oz. (56.2g) cream cheese, room temperature

2 tbsp. (30g) heavy whipping cream 

2 tbsp. (14g)  confectioners swerve 

1/2 teaspoon vanilla extract 

Instructions

  1. Preheat the oven to 350°F (177°C).
  2. Combine the filling ingredients in a bowl and stir together, set aside. 
  3. To make the dough, mix all the dry ingredients in a large bowl.
  4. In a separate bowl mix eggs, cream cheese, melted butter, and vanilla until incorporated.
  5. Add dry ingredients to the wet ingredients and stir with a spoon to combine until a dough forms.
  6. Put the dough between two pieces of parchment paper, and roll into a rectangle about 16x19 inch. The dough won’t be too sticky but it will be quite soft.
  7. Then, spread the filling evenly on the rolled dough.
  8. Now, using the parchment paper as help, starting with the shorter side, roll the dough into a log-like shape.
  9. Cut dough into 7 pieces and place in a baking dish coated with cooking spray. Bake for 40-45 min.
  10. When the cinnamon rolls are almost baked, combine all the icing ingredients in a mixing bowl. Mix with a stand or hand mixer until a smooth, slightly thick icing forms.
  11. For a glaze, spread the icing on the warm cinnamon rolls. And for a frosting, let the cinnamon rolls cool and then spread the icing on top.
