8 oz. spaghetti (or desired long pasta)

6 oz. pancetta (or bacon), chopped

2 cups half and half cream

2 egg yolks

1 cup freshly grated parmesan cheese

Salt and black pepper, to taste

  1. Cook the pasta according to the package directions.
  2. In the meantime, cook the pancetta in a skillet over medium heat for 6-7 minutes or until crispy.
  3. Transfer the pancetta to a bowl with a slotted spoon and set aside.
  4. Add the half and half cream to the skillet and bring to a simmer.
  5. Whisk in egg yolks and add parmesan cheese.
  6. Simmer until the cheese is melted. Drain the cooked pasta and add it to the skillet with the prepared sauce.
  7. Add the cooked pancetta on top and stir gently to coat the pasta with the prepared sauce. Taste and check to see if it needs any salt and pepper.
  8. Plate the pasta and serve.
