This crack chicken noodle soup recipe is packed with savory flavors. It combines tender chicken, bacon, fresh vegetables, and cheddar cheese with a creamy homemade broth. It's so, so good, and the best part is it's a one-pot meal that takes only a few minutes to prepare!

Ingredients

1 tbsp. olive oil

2 celery stalks, chopped

2 carrots, chopped

2 tbsp. ranch seasoning mix

2 cups chicken, cooked

8 oz. dried egg noodles

1 can cheddar cheese soup, (or any condensed soup)

4 cups chicken broth

1/2 cup milk

Salt and pepper

1 cup shredded cheddar cheese

1/4 cup bacon bits

Instructions

  1. Heat a Dutch oven or large pot over medium heat.
  2. Add the olive oil, celery stalks, carrots, and ranch dressing and cook for 5 minutes.
  3. Then, add the chicken, cheese soup, chicken broth, milk, salt, and pepper and mix well. Bring everything to a boil and simmer for around 20 minutes
  4. Now, once the vegetables are soft you can add the cheddar cheese and noodles into the pot and cook everything for about 5 minutes - or until the noodles are al dente.
  5. Finally, serve the soup in bowls, top it with some more bacon bits and cheddar cheese, and enjoy.
