Plus, it's super quick, too - this Mexican grilled chicken cooks up in only about 10 minutes!

Ingredients

Scale

½ cup orange juice, freshly squeezed

¼ cup lime juice, freshly squeezed

1 tsp. salt

3 cloves garlic, minced

2 tsp. oregano (or Mexican oregano)

1 tsp. ground cumin

1 tsp. black pepper

2 tbsp. achiote powder

2 tsp. onion powder

1 lb. (500g) chicken thighs, boneless and skinless

2 tbsp. vegetable oil

Cilantro, lime and pico de gallo to serve

Instructions

  1. Place the chicken in a large bowl and pour all the marinade ingredients (all ingredients listed except vegetable oil) over the chicken. Mix and cover the bowl with plastic wrap and marinate for at least 2 hours - it's best to marinate overnight.
  2.  Preheat a grill pan over medium-high heat, then add the vegetable oil to it and heat.
  3. Cook the chicken thighs in batches for about 3 to 5 minutes per side, depending on the thickness of the thighs, flipping once halfway through cooking.
  4. Serve with cilantro, lime, or pico de gallo.
