MEATLOAF WITH CRACKERS

INGREDIENTS

– 20 saltine crackers – 1 ½ pounds ground beeF – 1 medium onion – 1 medium carrot – 2 medium cloves garlic – ½ cup flat-leaf parsley – 1 large egg

– ½ cup ketchup –1 teaspoon Worcestershire sauce – 2 teaspoons Dijon mustard – 1 teaspoon coarse salt – ¾ teaspoon ground pepper – 1 tablespoon brown sugar

INSTRUCTIONS

1. Pulse the saltines in a food processor 2. Combine the meatloaf ingredients and prepare the glaze 3. Spread mixture in a loaf pan and top with glaze 4. Bake at 375F for 60 mins
