RED ENCHILADAS

INGREDIENTS

– 2 guajillo peppers – 1 ancho chile – 2 chile de árbol – ½ white onion – 2 cups beef broth – cooking spray – 8 corn tortillas – 2 cups shredded chicken – 1 cup tomato sauce

INSTRUCTIONS

1. Add peppers, white onion, beef broth, salt, and pepper to pot. Boil for 10 minutes. 2. Soak tortillas in sauce, fill with chicken, and fill with toppings.
