Set oven to 400ºF and line a large baking sheet with parchment paper. Whisk the eggs with salt and scramble them in a skillet with butter.

Roll the puff pastry into an 11-inch square and cut into six rectangles. Fill each with a sausage patty, eggs, and cheese, leaving room around the edges.
STEP 3: SEAL
Brush the edges of pastry with egg wash. Fold over, pressing gently to seal. Crimp edges with a fork. Cut 3 small slits on top of each pie to vent.
STEP 4: BAKE
Arrange on prepared baking sheet, brush tops with more egg wash, and sprinkle with salt. Bake for 18–20 minutes, or until puffed, deep golden, and crisp.
