INGREDIENTS FOR THE SAUCE
– Oyster meat (fresh or frozen)
– Water
– Cornstarch
– Sugar
– Salt
– Dark soy sauce
If using frozen oysters, place them in a bowl and cover with cold water. Let thaw for 10 minutes then drain well and set aside.
STEP 1: THAW & RINSE OYSTERS
STEP 2: MAKE THE OYSTER BROTH
Transfer oysters to a large pot with water. Bring to a simmer then reduce..Simmer for 30 minutes, skimming off any foam. Remove oysters and strain broth.
STEP 3: MIX THE SAUCE BASE
In a small bowl, whisk together cornstarch, sugar, salt, dark soy sauce, and 2 tbsp water until smooth.
STEP 4: THICKEN THE SAUCE
Pour oyster broth into a nonstick pot and bring to a gentle simmer. Lower the heat and stir in the soy sauce mixture. Cook, for 8–10 minutes, until thickened.
STEP 5: COOL & STORE
Let the sauce cool completely. Transfer to a clean, sealed jar and refrigerate for up to 1 month.
