INGREDIENTS FOR THE BARS
– Dates
– Water
– Lemon juice
– Brown sugar
– Baking soda
– Quick oats
– All-purpose flour
– Baking powder
– Salt
– Unsalted butter
Preheat your oven to 375°F (190°C). Line an 8x8-inch baking pan with parchment paper and set aside.
STEP 1: PREHEAT AND PREP
STEP 2: MAKE THE DATE FILLING
In a saucepan, combine ingredients for the filling.Cook for5–7 minutes until the dates soften. Stir in the baking soda, and cook another 1–2 minutes until thickened.
STEP 3: PREPARE THE CRUST
In a large bowl, whisk together ingredients to make the crust. Add cold butter and rub it into the dry ingredients until the mixture becomes crumbly.
STEP 4: ASSEMBLE THE BARS
Press half of the oat mixture firmly into the bottom of the prepared pan. Spread the date filling evenly on top. Sprinkle the remaining oat mixture over the filling.
STEP 5: BAKE
Bake for 40–50 minutes, until golden brown and the top is crisp. Don't overbake, keep an eye on the bars towards the 40-minute mark.
STEP 6: COOL & SERVE
Let the bars cool in the pan for 30 minutes before slicing into 9 squares. Serve warm or at room temperature.
