CHICKEN STEW

INGREDIENTS

– 3 tbsp butter – 3 tbsp neutral oil – 6 tbsp flour – 1 large onion – 1 bell pepper – 1 medium carrot – 2 stalks celery – 4 garlic cloves, minced

INGREDIENTS CONTINUED

– 2 tbsp creole seasoning – 4 cups chicken stock – 3 medium potatoes, cubed – 1 ½ cups corn – 3 cups shredded chicken, cooked – Salt and pepper to taste

INSTRUCTIONS

1. In a large pot, prepare the roux and cook for 10-15 mins 2. Add the vegetables, garlic, and spices 3. Add the chicken, corn, potatoes, and stock 4. Bring to a simmer for one hour
