CHICKEN AND DUMPLINGS CASSEROLE

INGREDIENTS

– 2 tbsp olive oil – 1 small onion, diced – 1 carrot, diced – 1 cup green peas – ½ cup corn – 3 cups cooked chicken – 1 cup self rising flour – 1 cup Greek yogurt – 4 cups chicken broth

INSTRUCTIONS

1. Cook the veggies in a skillet. 2. Mix flour and yogurt. Divide dough into pieces.  3. Layer veggies and chicken in dish. Top with dumplings, pour soup on top. Bake. 360 for 30 mins.
