This Vietnamese shrimp toast recipe combines layers of flavor in the form of tasty shrimp paste, surimi, seasonings, a dash of mayo, and crisp French bread. Ingredients

½ lb. shrimp, chopped

¼ lb. surimi, chopped

¼ cup chopped celery

½ tsp garlic powder

½ tsp onion powder

1/3 cup kewpie mayonnaise or plain mayonnaise

1/3 cup finely shredded mild cheddar

Salt and pepper, to taste

1 French baguette, sliced into 8 pieces

Instructions

  1. Preheat oven to 375°F. 
  2. In a food processor, combine shrimp and surimi. Process briefly until chopped but not turned into a paste.
  3. Transfer the mixture to a bowl. Add celery, garlic and onion powder, mayonnaise, and cheese. Stir to combine.
  4. Spread the mixture over the baguette slices. Arrange the toast onto the wire rack and position it over a baking sheet.
  5. Bake the toast for 20 minutes or until the shrimp is cooked through.
  6. Cool the baked toast briefly before serving.
