And everything in this roast beef sandwich compliments each other so well, that you'll want to make another one right after you eat it! Seriously, a homemade roast beef sandwich doesn't get better than this.

Ingredients

Scale

Caramelized onions:

1 onion (yellow, white, or red)

2/3 cup apple cider vinegar

5-6 tbsp. brown sugar

Garlic aioli:

1/3 cup mayonnaise

1 small clove of garlic, minced

1 teaspoon of freshly squeezed lemon juice

Sandwich:

4 brioche hamburger buns

1/2 pound of thickly sliced roast beef (you can use more if you prefer a thicker sandwich)

4 ounces sliced provolone

Green leaf lettuce

Sliced tomato

Small cucumber, sliced

Microgreens for a garnish

Instructions

Caramelizing the Onions:

  1. Peel your onion and cut it into relatively thin slices.
  2. Heat a skillet over medium-high heat with olive oil to cover the surface of the skillet—heat for about 2 minutes.
  3. Add your onions, and make sure they are spread evenly in the skillet. Cook the onions stirring once in a while until they're soft and golden-brown - this will take about 10 minutes.
  4. Add your apple cider vinegar and the brown sugar, stirring everything together until the mixture thickens.
  5. While the onions are cooking, you can make the garlic aioli sauce.

Making the Garlic Aioli:

  1. Crush the garlic cloves with the flat of a knife, remove the skin, then finely mince the garlic.
  2. Using the flat of a knife again, scrape and press the garlic against the cutting surface to make a paste that is as smooth as possible.
  3. Add the garlic to a small bowl and whisk together with the mayonnaise and lemon juice.
  4. Wrap and refrigerate for about 30 minutes to allow the flavors to develop.

Making the Sandwiches:

  1. For a cold roast beef sandwich, spread the garlic aioli on both sides of the bun, put all of the fixings on in any order you want, and then dig in.

Hot Roast Beef Sandwich:

  1. For a hot roast beef sandwich, first set the oven to broil.
  2. Spread the garlic aioli on both sides of the bun and top each half with roast beef, onions, and cheese.
  3. Place the sandwich halves on a cookie sheet. Broil 3 inches away from the heat for 2 to 3 minutes, or until the cheese is melted.
  4. Take your hot roast beef sandwich out of the oven, top with the fixings of your choice and enjoy!
